2 cups all-purpose flour
1/2 teaspoon ground allspice
1 teaspoon salt
1 cup unsulfured molasses
1/2 cup (1 stick) unsalted butter, softened
1/4 cup bourbon
1 cup packed light-brown sugar
4 cups coarsely chopped pecans, toasted

Steps:

  • Whisk together flour, allspice, and salt in a small bowl; set aside.
  • Melt molasses and butter in a small saucepan over low heat. Remove from heat; let cool slightly. Stir in bourbon. Transfer to a medium bowl; whisk in sugar until smooth. Stir in flour mixture and 1 cup pecans. Refrigerate dough until firm, at least 1 hour or up to overnight.
  • Preheat oven to 400 degrees. Scoop balls of dough using a 11/4-inch (1 ounce) ice cream scoop; roll in remaining 3 cups pecans. 1 cup butter
3 cups brown sugar
4 eggs, beaten with a fork
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons vanilla
2 cups pecans, finely chopped
4 cups flour

Steps:

  • Preheat oven to 350 degrees, rack in middle position.
  • Melt butter and.
  • add brown sugar.
  • Mix well and let cool.
  • Add beaten eggs and mix.
  • Add salt, baking soda, vanilla and nuts.
  • Mix well.
  • Add flour.
  • Mix until flour is thoroughly distributed.
  • Form dough into balls the size of a walnut with shell.
  • Place them on a greased cookie sheet, 12 to a standard sheet.
  • Press them down with a spatula sprayed with Pam (or greased).

3/4 cup cake flour
1/2 cup butter, melted
1 teaspoon vanilla extract
3/4 cup finely chopped pecans
6 tablespoons finely chopped red candied cherries
6 tablespoons finely chopped candied pineapple
3 large egg whites
1/2 teaspoon salt
3/4 cup sugar
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, whisk the flour, butter and vanilla until combined. Stir in pecans and fruits. In another large bowl, beat egg whites and salt on medium speed until soft peaks form. Gradually add granulated sugar, beating on high until stiff glossy peaks form and sugar is dissolved. Fold into the flour mixture., Spread into a greased 9-in. square baking pan. 2 cups sugar
1 cup light corn syrup
3 cups heavy whipping cream, divided

  • Line a 13-in. x 9-in. pan with foil; butter the foil. Set aside. In a heavy saucepan, combine the sugar, corn syrup, 1 cup cream and salt. Bring to a boil over medium heat, stirring occasionally. 2 c granulated sugar
1 c melted butter or margarine
