1 tablespoon water
1 cup pecan halves
1 1/2 cups Original Bisquick™ mix

1/2 cup powdered sugar

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with cooking spray; line with cooking parchment paper.
  • In medium bowl, stir melted butter, brown sugar and water until well blended. Stir in pecans to coat evenly. Pour into pan, and spread pecans in an even layer; set aside.
  • In large bowl, beat Cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter evenly over pecan mixture in pan.
  • Bake 29 to 34 minutes or until toothpick inserted in center comes out clean. Run knife around side of pan to loosen cake. Cool pan on cooling rack 5 minutes. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Replace any pecans that may still be in pan on top of cake. Cool 15 minutes.
  • In small bowl, mix powdered sugar and 2 teaspoons of the milk until well blended. If too thick to drizzle, add additional milk, 1/4 teaspoon at a time. Drizzle with fork over top. For 8 servings, cut into 8 wedges. Store loosely covered in refrigerator.

I WOULD HIGHLY RECOMMEND THAT BEFORE YOU BEGIN TO MAKE THIS RECIPE, THAT YOU READ IT AND STUDY IT. MAKE A LIST OF EVERY THING YOU NEED AND MAKE SURE YOU HAVE ALL INGREDIENTS ON HAND.
CAKE INGREDIENTS:
1/2 c unsweetened cocoa powder
3/4 c strong brewed coffee, cooled to room temperature
1/2 c cold water
2 tsp vanilla extract
2 1/2 c all-purpose flour
1 1/2 tsp baking soda
1/2 tsp sea salt
3/4 c (1 1/2 sticks) unsalted butter plus more for greasing pan, room temperature
1 1/2 c sugar
3 eggs, at room temperature
6 oz unsweetened chocolate, melted and cooled
1 8 or 9-inch pecan pie, fully baked and cooled to room temperature
FROSTING & GARNISH INGREDIENTS:
8 oz bittersweet or semisweet chocolate, chopped into small pieces
3/4 c heavy cream
1 pinch sea salt
1/2 c pecans, toasted and chopped
SPECIAL EQUIPMENT
1 10 x 3-inch cake pan

Steps:

  • 1. INGREDIENTS YOU WILL NEED.
  • 2. Fully bake a pecan pie (or buy one already bake) preferably in a disposable pie tin (so you can take it out easily later). Let it cool to room temperature. NOTE: if you bake your own pecan pie, I would recommend that you put parchment paper on the bottom of the pan. The first time I made this cake, my pie stuck and I had to cut in to 4 pieces. That did not change the taste of the cake, it was still delish!!
  • 3. Preheat your oven to 350F degrees. Grease your cake pan and line the bottom with a piece of parchment paper. NOTE: The first time I baked this cake, I used an aluminum mold and it worked fine. I have since purchased a 10 X 3-inch springform pan and I must say I prefer it over the aluminum mold.
  • 4. In a small bowl, whisk together the cocoa, coffee and water. Add in the vanilla. Set aside.
  • 5. In a medium bowl, sift together the flour, baking soda, and salt; set aside.
  • 6. In a standing mixer with a paddle attachment, cream together the butter and sugar until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Add the melted chocolate and mix until incorporated. Add the dry ingredients in thirds, alternating with the wet ingredients, beating well after each addition.
  • 7. Spoon 1/3 of the batter evenly into the bottom of the cake pan. Take the pecan pie out of the tin (you may need to cut it out, so it might make sense to bake your pie in a disposable pie tin) and place it right side up on top of the batter. I thought that the pie might sink to the bottom either now or during baking, but like a ship, it sailed on top.
  • 8. Cover the top and sides of the pie with the remaining batter. You may want to thwack the cake on the counter a couple of times to make sure there are no air pockets hiding between the pie and the side of the cake pan. Don't skip doing this to get the air bubbles out! Smooth the top.
  • 9. Bake in a 350 F degree oven for 30-35 minutes or until a toothpick inserted at THE EDGE of the pan comes out with just a few crumbs. NOTE: You are testing the sides because the pie is in the center and that will alter your results. NOTE 2: Ovens vary and I baked my 1st cake an addtional 10 minutes. I've since made my 2nd cake and found additional minutes were required. Don't start testing until you've baked at least 30 minutes. NOTE 3: Don't let the photo turn you away, this will be the bottom of the cake.
  • 10. Let the cake cool in the pan for 15 minutes the turn it out upside down onto a cooling rack to cool completely. When the cake is cool, it's time to make the ganache frosting.
  • 11. MAKING THE GANACHE FROSTING: Place the chopped chocolate in a bowl.
  • 12. Heat the cream to a simmer then pour over the chocolate.
  • 13. Let it sit for 1 minute then gently stir until the all the chocolate is melted and the ganache is smooth. Let it sit at room temperature for 25-35 minutes stirring occasionally until it is frosting consistency. NOTE: It took about 45 to 55 minutes for this to come to a good frosting consistency.
  • 14. Frost the top and sides of the upside-down cake and sprinkle with the chopped toasted pecans. NOTE: I placed waxed paper strips around cake before frosting for easy clean up.
  • 15. NOTE: Make sure the cake and pie in center is completely cooled before frosting and cutting.

  • 2. If you notice on the picture, the leaves were made using Pillsbury pie crust and cut out with a cookie cutter. I used Voortmans Maple Leaf Cookies. I just took the filling out and laid them on top of the cake. It turned out pretty. One Thanksgiving, I put a rattan horn of plenty on topped filled with candy corn. It was a big hit.

4 eggs
2 c chopped, toasted pecans
1 1/2 c light corn syrup
1/2 c packed, dark brown sugar

  • 1. Preheat oven to 325 degree F. Place cake mix, melted butter and 1 egg in large bowl. Beat on low speed until well combined, about 30 seconds.
  • 2. Measure out 2/3 cup batter; set aside. Spread remaining batter in bottom of ungreased 13x9 baking dish. Bake for 15 minutes or until top lightly browns and puffs up. Remove dish to wire rack and cool for 10 minutes. Leave oven on.

4 sticks butter, at room temperature
4 cups sugar
4 cups flour, cake or all-purpose
8 large eggs, at room temperature
1 (8-ounce) package cream cheese, at room temperature
2 to 3 teaspoons vanilla flavoring
1 cup pecans, chopped
1 cup brown sugar
1 jar of caramel ice cream topping

Steps:

  • Preheat oven to 300°F. In a mixer, cream butter, cream cheese, and sugar until smooth. Add eggs, one at a time. Then add flour one cup at a time. Last, add vanilla flavoring. Grease and flour tube/bundt pan and pour in batter. Once the batter has been poured in, sprinkle pecans and brown sugar on top (a cup or little more of each). Lightly press into the batter. Bake at 300°F for 1 hour and 15 minutes. (You may want to tent the top with foil to keep the nuts from scorching.) Then, increase the temperature to 325°F and bake for an additional 30 minutes. Test the cake with a fork or wooden skewer to check for doneness. The utensil should come out dry and clean (no batter). Bake 5 more minutes if needed. Remove from the oven and allow a few minutes to cool before removing from pan. When you invert onto a plate, you may lose a few nuts, but most should bake into the top layer of crust. Turn the cake onto another plate so that the nuts are on top. Drizzle cake with a jar of caramel ice cream topping. Heat from the cake will make the caramel melt over the pecans. Enjoy!

Cake
3 cups Texas pecan pieces
3/4 cup butter (1 1/2 sticks), at room temperature
2 cups sugar
5 egg yolks
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 cup sour cream
5 egg whites
1/4 cup dark corn syrup
Frosting
2 cups heavy cream
1 tablespoon sugar
1/2 teaspoon cinnamon

Steps:

  • 1. FILLING: Whisk together brown sugar, corn syrup, cornstarch, egg yolks, heavy cream and salt in a medium saucepan over medium heat. Whisking constantly, bring the mixture to boil and cook until it begins to thicken, about 1 minute. Remove from heat and stir in butter and vanilla. Allow the mixture to cool completely. Transfer the filling to a storage container. Press plastic wrap over top (to prevent skin from forming) and chill overnight. 2. CAKE: Preheat oven to 350 degrees. Grease three 9-inch round cake pans with butter, shortening or nonstick spray. Place pecan pieces on a rimmed baking sheet and toast 4-5 minutes until fragrant and lightly browned, then set aside to cool. Divide the pecans evenly among the cake pans, shaking to distribute evenly over the bottoms. 3. In a large bowl or using an electric mixer, cream the butter until smooth, and then beat in sugar until light and fluffy. Beat in the egg yolks and vanilla. 4. In a separate bowl, whisk together flour and baking soda. Alternating with sour cream, stir the dry ingredients into butter mixture, beginning and ending with the flour. 5. In medium bowl with an electric mixer, beat the egg whites until they form stiff peaks. Gently fold egg whites into batter, then divide the batter among the prepared pans. 6. Bake 20-25 minutes or until toothpick inserted in the center of each comes out clean. Cool in pans on a rack 10 minutes, then invert the cakes onto the rack. Brush the warm cakes with the dark corn syrup, and then cool completely. 7. To assemble, spread 1/2 of the pecan pie filling on one cake, pecan-side up. Place the second round on top of filling, pecan-side up. Spread the remaining filling over the second cake, and then top with the third round, pecan-side up. Refrigerate the cake at least 4 hours, or overnight, before frosting. 8. FROSTING: Whip the heavy cream, sugar and cinnamon until stiff peaks form (do not over-whip). Frost the cake and then refrigerate until you're ready to serve. You can frost the cake up to 6 hours in advance. Makes 12-15 servings. Cook's Tip For the best presentation, assemble the cake layers and filling a day in advance; this will allow the layers to meld and make the cake easier to slice. You can frost the cake the following day, and then refrigerate until you're ready to serve.

This is a delicious, moist pie/cake. It doesn't resemble a cake in texture. The only sense you can get that there's cake mix in here comes from the slightly cakey flavor. I found it in The Cake Mix Doctor.

1 (18 1/4 ounce) yellow cake mix (I used one with pudding mix in it)
8 tablespoons butter, melted
4 large eggs
1 1/2 cups light corn syrup
1/2 cup packed dark brown sugar
1 teaspoon pure vanilla extract
2 cups chopped pecans (the original recipe said to toast the pecans, but I didn't)
1/2 cup chocolate chips

Steps:

  • Preheat oven to 325 degrees.
  • Mix together cake mix, melted butter, and 1 egg. Blend for 1 to 2 minutes. The batter will be very thick - more like cookie dough. Reserve 2/3 cup of batter.
  • Pat remaining batter in bottom of 13x9 inch pan.
  • Bake for about 15 minutes or until crust is light brown and puffs up. Remove from oven and cool on a rack for 10 minutes. Leave the oven on.
  • Mix together reserved batter, corn syrup, brown sugar, remaining 3 eggs, and vanilla. Blend on low for 1 minute. Scrape down sides of bowl with a spatula. Mix at medium speed until well combined and blended. There will first be little chunks of the cake mix batter. Mix well until those chunks disappear.
  • Fold in pecans and chocolate chips.
  • Pour mixture on top of partially cooked batter and smooth it out with a spatula. Return pan to oven.
  • Bake cake until edges are brown but cetner is still a bit soft - 40-45 minutes.
  • Remove from oven and cook on a rack for 30 minutes.

Someone emailed this recipe to me several years ago. It is extremely rich but worth the calories and fat...once in a while. Perfect for special occasions.

2 c sugar
4 stick butter
4 eggs
1 tsp vanilla
1 1/2 c flour
2 c chopped pecans
16 oz whipped topping
8 oz whipped topping
8 oz cream cheese
1 can(s) sweetened condensed milk

Steps:

  • 1. Cream together the 2 c. sugar, 4 sticks butter, 4 eggs, 1 t. vanilla, and 1 1/2 c. flour. Blend in the 2 c. pecans. Spread into a cookie sheet pan and bake at 350 degrees for about 35 minutes. Cool cake. While cake is still in cookie sheet, cut into roughly 1" squares.
  • 2. Meanwhile, blend together the 16 oz. whipped topping, 8 oz. cream cheese, and the sweetened condensed milk. Set aside.
  • 3. Layer the cake alternately with the cream cheese mixture. I have used both a trifle bowl and and 9 x 13 baking dish; both work equally well. I make about 3 layers of each. If it seems like you might have too much for your chosen container you can make a small separate container. Top with the additional 8 oz. whipped topping. Can sprinkle a few extra chopped pecans as decoration.
