BUTTERY CARROTS

Buttery Carrots image

My mother made this recipe often when I was growing up. She got it from a friend who was a chef at a local restaurant my parents frequented. The onions really bring out the sweetness of the carrots. When I have carrots fresh from the garden, I don't even peel them-I just scrub them well before cutting. For holiday buffets, I often double or triple this recipe -Mary Ellen Chambers, Lakewood, Ohio

PEGGI'S SOUTHERN FRIED CABBAGE

PEGGI'S SOUTHERN FRIED CABBAGE image

Now I'm from the south. My hubby is a transplant from the north. When we met in Arkansas some 27 years ago, I was boilin' cabbage with bacon in it. This northern guy had to tell me how to fix it. Seems some other southerner had told him. I hope you enjoy it as much as we do.

Provided by Peggi Anne Tebben @cookiequeen

Categories     Vegetables

Number Of Ingredients 5

2 tablespoon(s) bacon grease or real butter, not margarine
1/2 head - cabbage, cored & cut into about 1" square pieces, no smaller
1/2 large onion, cut into slivers
- smidgen (about 1/4 tsp.) sugar
- salt & pepper to taste

Steps:

  • Place all ingredients in 10 3/4" cast iron skillet in the order given. Do not mix up at this time.
  • Start out on high heat for a minute or two, until cabbage starts to "give it up",then reduce heat to low & cover skillet.
  • Give it about 5 minutes before you start to stir it in skillet. Then, for the next 10 min, about, stir occasionally so it won't burn. Leave lid on to cook. Don't over stir it or it will just mush & not brown.
  • Cook until it is starting to get translucent & tender-crisp & brown somewhat, as in picture above.
  • Serve with anything. We had it with hamburger steaks & sauted onions today.

GARLICKY, BUTTERED CARROTS

Garlicky, Buttered Carrots image

This is one of the few occasions when overcrowding the skillet is a good thing. These carrots are cooked in fat (schmaltz, olive oil, butter), with a pinch of something spicy (red-pepper flakes, cayenne, even hot paprika), sort of half-steaming on top of each other until just tender (no mushy carrots here, please). At the end, they are seasoned with a bit of finely grated or chopped garlic off the heat, which quiets the garlicky punchiness without extinguishing it entirely. Like a sandwich cut into triangles, the fact that the carrots are sliced into rounds makes them taste above-average delicious.

Provided by Alison Roman

Categories     easy, quick, vegetables, side dish

Time 15m

Yield 8 to 10 servings

Number Of Ingredients 6

1/4 cup chicken fat, olive oil or unsalted butter
1/4 cup olive oil
Pinch of red-pepper flakes (optional)
2 bunches carrots, topped removed (about 1 pound), thinly sliced into rounds
Kosher salt and freshly ground black pepper
1 garlic clove, finely chopped or grated

Steps:

  • Melt chicken fat in a large skillet over medium-high heat. (If using butter, melt until lightly foamy and starting to brown, 2 to 3 minutes.) Add olive oil and red-pepper flakes, if using, swirling to bloom a bit in the butter. Add carrots and season with salt and pepper. Cook, tossing occasionally, until carrots are just cooked through, 3 to 4 minutes. (They should be simply softened, like al dente pasta, not soft or mushy.)
  • Remove pan from heat, and add garlic, tossing to coat, and transfer to serving bowl.

PEGGI'S BUTTER FRIED CARROTS

PEGGI'S BUTTER FRIED CARROTS image

This may be a fairly simple recipe, but to someone just starting to cook, it could mean the difference between an ok first dinner party where you might serve carrots heated up in water & an ALRIGHT dinner party that people really like eating. Any small thing you can do to a meal to enhance the flavor will be much more rewarding. Hope you enjoy.

Provided by Peggi Anne Tebben @cookiequeen

Categories     Vegetables

Number Of Ingredients 4

1 pint(s) or can sliced carrots canned in water or the equivalent of fresh ones, sliced 1/2"- 3/4" thick
2 tablespoon(s) real butter, don't substitute
1/8 teaspoon(s) sugar
- salt & pepper to taste

Steps:

  • DRAIN CARROTS WELL, IF USING CANNED CARROTS. IF USING FRESH, SLICE.
  • MELT THE BUTTER IN SMALL CAST IRON SKILLET, IF YOU HAVE ONE.
  • IF USING CANNED CARROTS: PLACE CARROTS IN SKILLET ON MEDIUM HEAT & ADD A SMIDGEN OF SUGAR, ABOUT 1/8 tsp. DON'T MEASURE, JUST GUESS. SALT & PEPPER.
  • CONTINUE COOKING & STIRRING UNTIL BUTTER IS ALMOST GONE. THEY WILL START BROWNING. THIS IS GOOD. IF THEY AREN'T BROWN, COOK A LITTLE LONGER. DON'T OVER STIR AS THEY WILL MUSH.
  • IF USING FRESH CARROTS, DO STEPS 1, 2, 3 ABOVE, EXCEPT PLACE LID ON SKILLET TO STEAM THE CARROTS FOR THE FIRST 10 MINUTES. COOKING TIME WILL TAKE LONGER FOR FRESH. CONTINUE WITH STEP 4. WAIT TO ADD YOUR SEASONINGS TO CARROTS UNTIL THEY SOFTEN UP SOME, OR IT WILL JUST FALL OFF CARROTS & NOT ADHERE TO THEM.

Tips:

  • Choose fresh, young carrots. They will be sweeter and more tender.
  • Wash and peel the carrots thoroughly. This will remove any dirt or debris.
  • Cut the carrots into uniform pieces. This will help them cook evenly.
  • Use a large skillet or wok. This will give the carrots plenty of room to cook without overcrowding.
  • Heat the oil over medium-high heat. This will help the carrots brown and caramelize.
  • Add the carrots to the skillet and cook, stirring frequently, until they are tender. This should take about 5-7 minutes.
  • Add the butter, sugar, and salt to the skillet. Stir to combine and cook for 1-2 minutes, or until the butter has melted and the sugar has dissolved.
  • Serve the carrots immediately. They can be enjoyed on their own as a side dish or used as a topping for other dishes.

Conclusion:

Butter-fried carrots are a simple but delicious side dish that can be enjoyed by people of all ages. They are easy to make and can be prepared in just a few minutes. The carrots are tender and slightly sweet, with a hint of butter and salt. They are a perfect accompaniment to any main course, and they can also be served as a snack or appetizer. So next time you're looking for a quick and easy side dish, give butter-fried carrots a try. You won't be disappointed!
