1 cup hot milk

1 (8-ounce) package frozen peas, blanched in salt water

Steps:

  • Bring a pot of water to boil for the pasta.
  • For the sauce, melt butter in a saucepan which will be large enough to accommodate the pound of cooked pasta, and saute onion until it becomes translucent. Mix in the flour to make a roux. Gradually add milk and allow thickening over low heat. Remove from heat and whisk in Parmesan. Immediately cover surface of sauce with a sheet of plastic wrap and set aside briefly.

1 (16 ounce) package penne pasta
2 tablespoons olive oil (or bacon drippings)
5 hot Italian sausage links (you can use mild)
2 bell peppers (you may also use poblanos or other mild chiles)
1 white onion
1 tablespoon garlic (minced)
salt & pepper (to taste)
2 tablespoons flour (optional)
1/4 cup chicken broth or 1/4 cup stock
2 cups heavy cream
1 cup parmesan cheese (grated)
fresh basil

Steps:

  • Slice sausage into 3/4 inch slices.
  • Cut onions and peppers in to thin strips (julienne slices).
  • Mince 3 to 4 cloves of garlic or measure out 1 Tbsp of pre-minced garlic.
  • Chop basil into small strips (about 1 inch in length).
  • Prepare pasta based on packaged instructions.
  • Fry sausage in oil over medium-high heat until all pieces have turned brown.
  • Add peppers and onions, season with salt and pepper to taste, and fry with sausage for 2 minutes.
  • Add garlic and fry for 1 more minute.
  • Dust the mixture with 2 Tbsp of flour (this step is optional, and will create a thicker sauce) and stir for about 1 1/2 to 2 minutes.
  • Add chicken broth and stir mixture for about 30 seconds.
  • Turn heat down to medium-low and add cream. Stir to combine.
  • Slowly bring cream to a boil and let simmer for 5 minutes over medium-low heat, stirring occasionally.
  • Add Parmesan cheese and stir until cheese is melted into mixture.
  • Garnish with fresh basil and serve over pasta.

1 small onion, chopped

3 minced garlic cloves
1/2 teaspoon olive oil
1/4 teaspoon black pepper

  • Completely soften 1/2 cup of butter (1 stick).

  • Sauté minced garlic approximately three minutes until just cooked.

  • Refrigerate while salmon in prepared, so that butter is somewhat soft but still holds its shape.

  • In a large skillet or wok cook the garlic, onion, bell pepper in the butter over moderate heat, stirring, until the vegetables are softened. add the tomato, salt, pepper,oregano, parsley and cloves- stir. Add the pumpkin cubes and let simmer on low heat until pumpkin starts to soften. Slowly add 1/2 c of the broth and return to moderate heat. stirring occasionally, approx. 10min. FOR THE CHICKEN: Wash chicken in water with lemon juice and garlic salt. Pat dry. Cube chicken breast. In a separate frying pan, add your EVOO, (once pan is hot) and poultry seasoning. Stir. Add mushrooms once celery is translucent. On moderate heat add chicken cubes and stir, to coat chicken with seasoning. Squeeze lime over and stir. Add the pasta to the alfredo sauce, covering pasta with alfredo. Pumpkin chicken mixture is done when pumpkin is easily picked up with fork, (will be orange/brown in color, there should still be a little sauce left). 1 box penne noodles
3 chicken breasts (boneless/skinless)
1 chopped tomato
1 chopped broccoli ( i buy it in the microwave steam bags )
1 c heavy whipping cream
1/4 c butter
1 1/2 c parmesan cheese
1 Tbsp cheap bottle chardonnay ( i use tisdale )
1 clove chopped garlic ( i buy 2 in a box )
1 chopped ( into 1/2 rings ) yellow onion
1-2 tsp extra virgin olive oil
1-2 tsp brown sugar
1/8-1/4 c red wine vinegar
1-2 tsp black pepper
1 clove chopped garlic
1-3 Tbsp extra virgin olive oil

Steps:

  • 1. Take Marinade ingredients and combine together ( Red Wine Vinegar, garlic, black pepper, evoo) Brush entire Marinade onto thawed chicken breasts, once finished, wrap chicken breasts in saran wrap and let marinade soak in for 30-45 minutes Cook Chicken according to package directions.
  • 2. Cook Penne noodles according to box directions. Cook broccoli according to package directions Take all alfredo sauce ingredients and place into medium sauce pan. 1 cup heavy whipping cream, 1/4 cup butter, 1 1/2 cup parmesan cheese, 1 tablespoon chardonnay, 1 clove garlic-chopped and cook on low-medium heat until cheese is melted and contents are warmed thoroughly (constantly stirring so NOT to burn cheese too bottom of sauce pan) Take 1/2 ring onion and saute in small frying pan with evoo and brown sugar until carmelized (browned thoroughly)
  • 3. Cut up cooked chicken into strips, pour alfredo sauce onto penne noodles add chicken strips and serve on plate or in a bowl and garnish with chopped tomatoes, onions and broccoli ENJOY!!!!

Tips:

  • Use high-quality ingredients: The better the ingredients you use, the better your Alfredo sauce will be. Look for fresh Parmesan cheese, heavy cream, and butter.
  • Don't overcook the pasta: Pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will be mushy and won't hold the sauce well.
  • Make sure the sauce is thick enough: The sauce should be thick enough to coat the pasta, but not so thick that it's clumpy. If the sauce is too thin, add a little more Parmesan cheese or butter. If the sauce is too thick, add a little more milk or cream.
