SWEET ITALIAN SAUSAGE WITH PENNE PASTA

Sweet Italian Sausage With Penne Pasta image

We are Italian and if you go through my recipes you'll find alot of wonderful, quick and easy pasta dishes. We love our pasta and we love garlic, too! Serve this with garlic Texas toast. I can't eat pasta much anymore because I'm diabetic but my husband and daughter love it so I keep making it for them. I usually eat salmon (I have one or two good ones for salmon, too- check them out).

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

1 lb penne pasta
1 lb broccoli floret (I use frozen)
8 ounces Italian sausage, cut in bite-size chunks (sweet & mild)
2 tablespoons garlic, minced (you can use less if you want)
2 tablespoons olive oil
2 tablespoons butter
1/2 cup grated pecorino romano cheese

Steps:

  • Boil the water and cook the penne according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.
  • Meanwhile, heat the oil (medium-high heat) in a large skillet and saute the broccoli, sausage and garlic until tender and starting to brown, about 15 to 20 minutes.
  • Toss the butter, hot pasta, sausage mixture and romano cheese together and serve. Pass the grated cheese at the table.

PENNE WITH SAUSAGE AND TOMATOES

Penne with Sausage and Tomatoes image

Categories     Pasta     Tomato     Quick & Easy     Sausage     Bon Appétit

Yield 2 servings; can be doubled or tripled

Number Of Ingredients 10

1 tablespoon olive oil
1 medium onion, chopped
4 Italian hot sausages, casings removed
1/4 teaspoon dried red pepper flakes
1/3 cup dry red wine
1 28-ounce can crushed tomatoes with added puree
2 teaspoons dried marjoram, crumbled
8 ounces penne pasta
Salt and freshly ground pepper
Freshly grated Parmesan or Romano cheese

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add onion and cook until tender, about 8 minutes. Add sausage and cook until no longer pink, breaking up with fork, about 6 minutes. Stir in pepper flakes. Add wine and boil until absorbed. Mix in crushed tomatoes. Bring to boil, reduce heat and simmer 25 minutes. Stir 2 tablespoons marjoram into sauce.
  • Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return penne to pot. Add half of sauce and stir to coat. Season with salt and pepper. Transfer to large bowl. Serve, passing Parmesan separately. (Freeze remaining sauce up to 2 months in covered container.)

Tips:

  • Choose the right sausage: For the most flavor, look for a hot Italian sausage that is made with pork shoulder or thigh. Avoid sausages that are made with fillers, such as bread crumbs or cereal.
  • Brown the sausage well: Browning the sausage will help to develop its flavor and give it a crispy texture. Be sure to cook the sausage over medium heat so that it has time to brown evenly.
  • Use a good quality pasta: The type of pasta you use will make a big difference in the final dish. Look for a pasta that is made with high-quality durum wheat and that has a good texture.
  • Cook the pasta al dente: Al dente pasta is pasta that is cooked through but still has a slight bite to it. This is the ideal texture for pasta dishes because it will hold up well to the sauce and toppings.
  • Make a flavorful sauce: The sauce is what really brings this dish together. Be sure to use a flavorful tomato sauce that is made with fresh ingredients. You can also add other ingredients to the sauce, such as onions, garlic, herbs, and spices.
  • Top the pasta with plenty of cheese: Cheese is the perfect finishing touch for this dish. Use a good quality Parmesan cheese or a blend of Parmesan and mozzarella cheese.

Conclusion:

This penne pasta with hot Italian sausage is a delicious and easy-to-make dish that is perfect for a weeknight meal. The sausage and tomato sauce are packed with flavor, and the pasta is cooked to perfection. This dish is sure to be a hit with your family and friends.
