Time 40m

Yield 8

Number Of Ingredients 12

1 medium head cauliflower, cut into bite-sized florets
2 tablespoons olive oil
2 cloves garlic, minced
¼ cup butter
¼ cup all-purpose flour
1 (16 ounce) package penne pasta
4 cups hot skim milk
1 cup grated Romano cheese
½ teaspoon ground nutmeg
½ teaspoon salt
2 medium tomatoes, seeded and diced
freshly cracked black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).

  • Roast in the preheated oven for 15 minutes. Sprinkle garlic over cauliflower and toss to combine. Continue to cook until cauliflower is tender and beginning to brown, about 5 minutes longer. Remove from the oven.
  • While the cauliflower is roasting, melt butter in a skillet over medium-low heat, and bring a large pot of lightly salted water to a boil.
  • Add flour to the melted butter and stir until smooth. Increase heat to medium and cook, stirring often, until mixture turns a light, golden color, about 5 minutes.

  • Add hot milk, 1 cup at a time, to the butter mixture, whisking continuously until very smooth. Bring to a boil. Cook, stirring constantly, for 10 minutes. Stir in Romano cheese and remove from the heat. Season with nutmeg and salt and set aside until ready to use.
  • Combine penne, roasted cauliflower, bechamel sauce, and tomatoes in a large bowl. If the sauce is too thick, stir in a little of the reserved pasta water. Serve immediately with black pepper.

Coarse kosher salt

1 tablespoon whole grain Dijon mustard
10 ounces penne (3 1/2 cups)
1 cup fresh breadcrumbs (from crustless French bread ground in processor)

  • Melt 2 tablespoons butter in large skillet over medium-high heat. Add cauliflower; sauté until beginning to brown, about 5 minutes. Add tomatoes and green onions. Cook 1 minute to blend flavors. Remove from heat. Season with coarse salt and pepper.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and efficient in the kitchen.
  • Choose the Right Pasta: Penne is a great choice for this recipe, but you can use any short pasta that you like. Just make sure it's a pasta that will hold up well to the sauce.
  • Cook the Pasta Al Dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for cooked pasta. Pasta should be cooked until it is tender but still has a slight bite to it.
  • Use Fresh Vegetables: Fresh cauliflower and broccoli will give your sauce the best flavor and texture. If you can't find fresh vegetables, you can use frozen vegetables in a pinch.
  • Brown the Beef Well: Browning the beef will help to develop its flavor and give the sauce a richer color. Make sure to brown the beef in a large skillet over medium-high heat so that it gets a good sear.
  • Use Good Quality Canned Tomatoes: Canned tomatoes are a great way to add flavor and acidity to your sauce. Make sure to use good quality canned tomatoes that are packed in tomato juice or puree, not water.
  • Season the Sauce to Taste: Once the sauce is simmering, taste it and adjust the seasoning as needed. You may want to add more salt, pepper, garlic powder, or Italian seasoning.
  • Serve Immediately: This dish is best served immediately after it is cooked. The pasta will start to absorb the sauce and become soggy if it sits for too long.

Conclusion:

This penne with cauliflower and beef sauce is a delicious, hearty, and healthy meal that the whole family will enjoy. It's perfect for a weeknight dinner or a casual weekend lunch. With a few simple tips, you can easily make this dish at home. So what are you waiting for? Give it a try today!
