1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon crushed red pepper flakes
2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
1 jar (24 ounces) marinara sauce
3/4 cup half-and-half cream
4 cups chopped fresh spinach

Steps:

  • Cook pasta according to package directions; drain., In a large skillet, heat 1/2 tablespoon each butter and oil over medium-high heat. Saute 1 pound shrimp with 1/4 teaspoon pepper flakes until shrimp turns pink, 3-5 minutes. Remove from pan; repeat., In same skillet, combine marinara sauce and cream; bring to a boil over medium heat. Stir in spinach until wilted. Add pasta and shrimp; toss and heat through.

2 tablespoons fine sea salt
1 lb whole wheat penne (al dente)
3/4 lb fresh broccoli florets
1/3 cup extra virgin olive oil
1 green bell pepper (Medium Diced)
2 serrano chili peppers (Minced)
1/2 cup red onion (Sliced Thin)
2 fresh garlic cloves (Chopped)
2 cups grape tomatoes
3/4 lb shrimp (P&D 31-41)
1 tablespoon Old Bay Seasoning
1/4 cup white zinfandel wine
1 lemon, juice and zest
1 lemon (Sliced)
1 cup asiago-parmesan cheese (Shaved)
1/4 cup Italian parsley (Chopped)
3 tablespoons fresh thyme leaves (Chopped)
2 teaspoons chili-flavored olive oil

Steps:

  • Bring 4-quarts water to a full boil and add 1-tablespoon fine sea salt. Add penne pasta and cook until al dente about 8-10 minutes. Remove from heat, drain and hold warm.
  • Bring 4-6 quarts water to a full boil and add remaining fine sea salt. Add broccoli florets and blanch for 4-5 minutes. Remove from heat, drain and hold warm.
  • In a large Saute pan heat 3-tablespoons olive oil. Add bell pepper, serrano pepper, red onion, garlic, tomatoes, shrimp and old bay seasoning. Saute 3-4 minutes or until shrimp are cooked.
  • Add white Zinfandel wine and reduce by one-half.
  • In a large bowl toss pasta, broccoli florets, shrimp, lemon juice, lemon zest, asiago-parmesan cheese, olive oil, chili oil and fresh chopped herbs. Season with salt and pepper to taste.
  • Serve on warm plates and garnish with lemon slices.

This baked pasta dish is the result of playing around in the kitchen one day and merging two beloved cheesy dishes: chiles rellenos and pasta al forno. It's creamy with some heat and tang, but nothing overwhelming.

2 cups (480 ml) whole milk
1 cup (240 ml) heavy cream
One 15-ounce (425-g) can crushed tomatoes
One 4-ounce (115-g) can diced green chiles, drained
2 cups (230 g) shredded sharp Cheddar or Mexican blend cheese
1 heaping tablespoon Dijon mustard
Salt and pepper
1 pound (455 g) penne or ziti
1 cup (100 g) freshly grated Pecorino or Parmesan cheese

Steps:

  • Preheat the oven to 500°F (260°C), with a rack in the middle position. Bring a large pot of water to a boil over high heat. Meanwhile, in a 13 by 9-inch (33 by 23-cm) baking dish, stir together the milk, cream, tomatoes, chiles, Cheddar, and mustard. Season with 1 teaspoon salt and some pepper, then set the tomato mixture aside.
  • When the water boils, season it generously with salt; it should taste like seawater. When it returns to a boil, add the pasta, quickly stir to separate the noodles, then cover the pot. When the water returns to a boil again, uncover and boil the pasta until very al dente, stirring occasionally.
  • Drain the pasta thoroughly, then pour the noodles on top of the tomato mixture and toss to combine. Gently "shake" the dish to distribute the ingredients, then top evenly with the Pecorino.*

2 spring onions, finely sliced
1 chilli, finely sliced
⅔ cup fresh coriander, finely chopped
