2 red bell peppers (cored, seeded, and cut into 1-inch strips)
2 zucchini (quartered lengthwise and cut into 1-inch pieces)
2 summer squash (quartered lengthwise and cut into 1-inch pieces)
4 cremini mushrooms (quartered)
1 yellow onion (peeled and sliced into 1-inch strips)
1/4 cup extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon dried Italian herb blend or herbes de Provence
1 pound penne or elicoidali pasta
3 cups marinara sauce
1 cup grated fontina cheese
1/2 cup grated smoked mozzarella
1/4 cup grated Parmesan (plus 1/3 cup for topping)
1 1/2 cups frozen peas (thawed)
2 tablespoons unsalted butter (cut into small pieces)

Steps:

  • Preheat the oven to 450°F.

1/2 small cauliflower, cut into 1/2-inch pieces (about 2 cups)
2 medium carrots, diced into 1/2-inch pieces
2 cloves garlic, roughly chopped
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons honey or agave
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 ounces thinly sliced prosciutto, coarsely chopped

Steps:

1 large red bell pepper, cut into 1/4-inch-thick slivers
4 teaspoons dried basil, divided
4 tablespoons balsamic vinegar, divided
1 tablespoon extra virgin olive oil

8 ounces penne pasta (I used homemade fettucini noodles, but any pasta will work)
2 tablespoons reduced-fat sour cream
