Steps:

1 1/2 lbs Italian sausages (casings removed)
1 medium onion, chopped
2 tablespoons minced fresh garlic (or to taste)
1 -3 teaspoon dried chili pepper flakes (or to taste)

1/2 teaspoon dried oregano
1 tablespoon tomato paste (use a tablespoon of tomato paste!)
1/3 cup white wine
2 (14 ounce) cans crushed tomatoes
1 (14 ounce) can whole tomatoes (drained and chopped)

3/4 cup 18% table cream or 1/4 cup whipping cream

1 lb uncooked penne pasta

  • In a large skillet heat oil over medium heat.
  • Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 minutes) using a slotted spoon remove to a bowl and leave some fat in the skillet.

But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

1 lb penne pasta (fusilli or ziti could also be used, but I prefer penne)
3 tablespoons olive oil (preferably extra-virgin)
3 cloves garlic, minced
1 pinch cayenne pepper
1 lb sweet mild Italian sausage
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons unsalted butter (cut into small bits)
1/2 cup freshly grated parmesan cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat leaf parsley

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add sausage meat and cook, stirring to break up large chunks, until meat is browned and just cooked through, 5 to 7 minutes.
