6 scallions (white parts sliced and green parts chopped)
1/3 cup fresh parsley leaves
1/4 cup toasted pine nuts
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
2 teaspoons finely grated lemon zest
3/4 pound medium shrimp, shelled and deveined, tails-on
Juice 1/2 lemon
Lemon wedges and green salad, for serving, optional

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions for al dente. Reserve 1/4 cup cooking water and then drain the pasta.
  • Meanwhile, put the scallion greens, parsley, pine nuts, 1/4 cup oil, 1 teaspoon salt and a few grinds of pepper in the bowl of a food processor and pulse the until smooth. Set aside.

1 head of garlic, top cut off, drizzled with olive oil and baked, covered for 1 hour in 375 oven.
2 Tablespoons olive oil
1 lb shrimp, shelled and cleaned
1 lb sea scallops, halved
1 cup low sodium chicken broth
6 Tablespoons butter
1/4 teaspoon red pepper flakes
1/2 cup heavy cream
juice of half a lemon
1 1/2 cups finely shredded romano cheese
1 pound penne pasta, cooked and drained.

Steps:

  • When garlic is cool enough to handle, squeeze cloves into a small bowl. Mash lightly with a fork until pasty. Saute shrimp and scallops in olive oil in large skillet over medium heat, until cooked through, about 3 minutes. Remove shellfish from pan and set aside in medium bowl, covered. Deglaze pan with chicken broth and reduce until slightly pasty. Lower heat while adding butter so it stays thick when melted. Add heavy cream, lemon juice, red pepper and mashed garlic. Increase heat and stir until ingredients incorporate. Do not allow to boil. Add remaining cheese and stir about 1 minute more until sauce is thick and smooth. 1/2 cup sun-dried tomato packed in oil
1 red pepper, sliced
1 yellow pepper, sliced
1 orange bell pepper, sliced
1/2 lb raw shrimp, deveined, peeled
1/2 lb sea scallops, cut in half
1/2 cup fresh basil, chopped, separate into two 1/4 cup piles
2 garlic cloves, chopped
1/2 teaspoon dried oregano
2 tablespoons extra virgin olive oil
1/2 tablespoon canola oil, flavoured with sun dried tomatoes
2 cups chicken broth
3/4 cup dry white wine
3 tablespoons tomato paste, heaping
2/3 cup heavy cream (optional)
12 ounces penne pasta
3/4 cup parmesan cheese, grated

Steps:

  • Combine and heat both oils in a heavy large skillet over medium-high heat.
  • Add peppers and saute until crisp-tender, about 5 minutes.
  • Using a slotted spoon, transfer peppers to a bowl.
  • Add sundried tomatoes, shrimp, scallops, 1/4 cup of basil, garlic and oregano to the same skillet and saute until the shrimp are just opaque in the centre, about 3 minutes.

1/2 teaspoon lemon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

1 lb bay scallop
12 ounces penne or 12 ounces spiral shaped pasta
1 tablespoon olive oil
1 tablespoon butter
1 cup chicken broth
1 1/2 tablespoons cornstarch
1/4 cup water
1/2 cup fat free sour cream or 1/2 cup low-fat sour cream

Steps:

  • In a bowl, combine salt, lemon pepper, garlic and onion powders, nutmeg, chili powder, and cayenne pepper.
