So easy, so creamy and so good. From my well worn copy of Best-Loved Pennsylvania Dutch Recipes. My DH and I ate at a restaurant yesterday where I had one bite of their terrible rice pudding - what a shame! There is no excuse for that since a good rice pudding is easy to make as long as you check on it every 15 minutes. The first time I made this I thought there was a typo since it looks like so little rice and so much milk, but the rice fluffs big time!

3 tablespoons rice, uncooked (not quick cooking)
4 tablespoons sugar
4 cups milk (a bit more if needed)
2 teaspoons vanilla extract
1/2 cup raisins (optional) or 1/2 cup craisins (optional)

Steps:

  • Preheat oven to 300 degrees.
  • Mix all ingredients in a casserole dish.
  • Bake for 2 hours, stirring every 15 minutes. Add more milk if mixture becomes dry.
  • Cool.
  • Cover with plastic wrap to prevent a "skin" from forming and refrigerate.
  • Wonderful when sprinkled with a little cinnamon-sugar (no need to buy the expensive variety, make your own by mixing 1/2 cup sugar with 1 tablespoon cinnamon and store in a small jar).

3 to 4 small cucumbers
1 teaspoon salt
1 medium onion, thinly sliced into rings
1/2 cup sour cream
2 tablespoons white vinegar
1 tablespoon minced chives
1/2 teaspoon dill seed
1/4 teaspoon pepper
Pinch sugar
Lettuce leaves, optional
Tomato slices, optional

Steps:

  • Peel cucumbers; slice paper-thin into a bowl. Sprinkle with salt; cover and refrigerate for 3-4 hours. , Rinse and drain cucumbers. Pat gently to press out excess liquid. In a large bowl, combine cucumbers and onion; set aside. In a small bowl, combine sour cream, vinegar, chives, dill seed, pepper and sugar. , Just before serving, add dressing to cucumbers; toss to coat. Arrange lettuce and tomatoes in a serving bowl if desired. Top with cucumbers.

3/4 cup uncooked white shortgrain rice (Aborio rice is good)
3/4-1 cup sugar
1 pinch salt
1 quart milk or 1 quart half-and-half
1 (14 ounce) can evaporated milk
1 teaspoon vanilla
1 cup raisins (optional)
3 tablespoons cornstarch
3 tablespoons water

  • In a large heavy-bottom saucepan, cook rice according to package.
  • Drain any additional liquid; add the sugar, pinch of salt, half and half, evaporated milk and vanilla.
