2 garlic cloves, minced

1 cup freshly cracked black pepper
4 (8 ounce) tuna steaks, at least 1 inch thick
2 tablespoons olive oil
1/2 cup unsalted butter, softened

1 large lemon, zested and juiced
3 garlic cloves, minced

3 tablespoons coarsely chopped fresh thyme leaves
