1-1/4 pounds beef top round steak or top sirloin steak, cut into 1-inch cubes
1 garlic clove, minced

1 can (10-1/2 ounces) beef broth
1/4 cup water

3 red bell peppers (ribs and seeds removed), cut into 1-inch-wide strips
2 yellow bell peppers (ribs and seeds removed), cut into 1-inch-wide strips
2 medium red onions, halved and cut into 1-inch wedges
3/4 pound white new potatoes, well scrubbed and cut into 1-inch chunks
5 garlic cloves, peeled (3 left whole and 2 cut into 12 slivers)
2 tablespoons olive oil
Coarse salt and ground pepper
2 1/2 pounds eye-of-round beef roast
3/4 teaspoon dried thyme

Steps:

  • Preheat oven to 400 degrees. Place peppers, onions, potatoes, and whole garlic cloves on a large rimmed baking sheet. Drizzle with half the oil, season with salt and pepper, and toss to coat.
  • Using a paring knife, make 12 small slits in top and sides of roast; push in garlic slivers. Move vegetables to sides of sheet. Place beef in center, and coat with remaining oil; rub all over with 1 1/2 teaspoons coarse salt, 1/2 teaspoon pepper, and thyme.
  • Roast 40 to 50 minutes, tossing vegetables occasionally, until tender and an instant-read thermometer inserted into thickest part of beef registers 130 degrees for medium-rare. Let meat stand 10 minutes, loosely tented with aluminum foil to keep warm. Cut half into very thin slices (reserve remaining half for leftovers). Serve with vegetables.

1 1/2 lbs thick-cut round steaks, cut into 1 1/2-inch cubes, fat trimmed
1 (10 3/4 ounce) can beef broth
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon seasoning salt (I use Johnnie's)
1 large onion, coarsely chopped
2 tablespoons butter
1/4 teaspoon thyme, crushed with fingers
3 -4 medium red potatoes, not small ones
1 cup sliced fresh baby carrots, measure after slicing
1 (7 ounce) can corn, drained
1 (14 1/2 ounce) can green beans, drained
1 (4 ounce) can sliced mushrooms, drained (optional)
2 cups beef gravy, homemade or packet kind
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 1/2 cups flour
1 cup cold butter, cut up

250 g puff pastry (if making for a pot pie)
1 kg beef, stewing
1/2 cup flour (approx.)
2 tablespoons oil
2 onions, large, cut into thin slices
2 garlic cloves
1 cup mushroom, button, thick slice
2 celery ribs, small dice
2 carrots, thick sliced
1 tablespoon tomato puree (heaped)
1 cup water
1/4 teaspoon basil, dry
1/2 teaspoon oregano, dry
2 beef bouillon cubes
1 ham stock cube
salt and black pepper

Steps:

  • Strip any fat off the meat then cut into medium dice, prepare all the vegetables.
  • Place the flour in a large plastic bag, then add half the meat, shake it about and get all the meat coated then do the same with the other half.
  • Using either a frying pan or skillet, add half the oil and seal the meat, in two batches then set to one side.
  • Heat the remaining oil in a large saucepan adding the onion, celery and garlic, cooking slowly for 3-4 minutes.
  • Add the stock cubes, tomato puree, herbs, pepper and salt and the water ( do not add it all if you feel it will be too much ) and bring to the boil.
  • Add the meat and simmer for 45 minutes this is where you can add the remaining water, but it should not quite cover the ingredients) then add the diced carrot. cook for a further 15 minutes Stir occasionally. Thicken if you feel the gravy is on the thin side.
  • For a Pot pie, pre heat the oven to 200c.
  • Using about 250 grams of pasty roll out until quite thin. place ingredients in the pie dish and cover with the pastry in the usual way. I only use pastry as a lid, I dont line the pie with pastry as well. Cook in the oven for at least 30 minutes.
  • serve with mashed potatoes and a vegetable of your choice if serving as a casserole serve with vegetables of your choice.
