1/2 pound dark sweet cherries, pitted and chopped (about 1 cup)
2 teaspoons fresh lime juice
1/4 teaspoon freshly grated lime zest
1 tablespoon finely chopped red onion
1 teaspoon finely chopped seeded fresh jalapeño chili (wear rubber gloves)
1 1/2 teaspoons finely chopped fresh coriander
3/4 pound pork tenderloin, trimmed of excess fat
2 tablespoons crushed black peppercorns
1 tablespoon olive oil

Steps:

  • Preheat oven to 425°F.
  • In a bowl stir together cherries, lime juice, zest, onion, jalapeño, and coriander.
  • Season pork with salt and press peppercorns into it. In a large heavy skillet heat oil over moderately high heat until hot but not smoking and brown pork on all sides.
  • Transfer pork to a shallow baking dish and roast in oven until a meat thermometer registers 155°F., about 20 minutes. Transfer pork to a cutting board and let stand 5 to 10 minutes. Slice pork into 1/2-inch-thick medallions and serve with salsa.

Recipe is from my "A Tasteful Medley of Memphis" cookbook. Peppered pork is really delicious - I've had it baked and I've had dried peppered pork. The pepper is not overpowering -- just adds a bit of a bite and a lot of flavor.

2 pork tenderloin (1# each)
1 tablespoon fresh coarse ground black pepper (more if needed)
1/2 cup white wine
1/2 cup chicken broth
1/2 cup low-fat sour cream
2 teaspoons Dijon mustard (coarse grain, country style, more to taste)

Steps:

  • Roll tenderloins in pepper to coat. Place in a roasting pan and bake in a pre-heated 350 degrees F oven for 30 - 40 minutes. Remove from oven, place pork on a cutting board and drain fat from pan. Pour wine into pan and place over high heat, scraping up any browned bits with a wooden spoon. Add broth and cook until reduced by half. Remove from heat and stir in sour cream and mustard. Slice pork and top with sauce.

I grilled this indoors on my cooktop grill or it can also be baked in the oven and glazed the last several minutes of cooking. 4 (1 -2 lb) pork tenderloin
2 teaspoons salt
1 teaspoon pepper
1 tablespoon olive oil
14 ounces peppered raspberry preserves
3 tablespoons Dijon mustard
2 teaspoons prepared horseradish
3 teaspoons tangerine balsamic vinegar
2 teaspoons lemon juice

Steps:

  • Brush pork with oil and sprinkle with salt and pepper. Let meat come to room temperature (about 30 minutes out of refrigerator). Make glaze: combine remaining ingredients in saucepan and bring to boil. Reduce heat and allow to thicken slightly. Heat grill or grill pan to medium high heat. Grill meat and cook to internal temperature of 155 degrees F (approx. 25 minutes). Glaze meat the last 5-10 minutes of cooking time. Let meat rest 5-10 minutes and slice.
