2 1/2 cups flour (I'm using bread flour but you could use all-purpose)
1 tablespoon kosher salt
1 teaspoon instant yeast (see Cook's Note)
1/4 cup olive oil, plus more for the baking sheet
1 pound sliced lunch meat (I'm using pepperoni)
1 pound cheese (I'm taking mozzarella)
2 ounces Parmesan, grated

Steps:

  • For the dough: Combine the flour, salt and yeast in the bowl of a stand mixer fitted with a dough hook attachment. Stir to combine, then add 1 cup water. Mix on low speed until the dough comes together into a rough ball. Continue mixing at medium-low speed until the dough forms a smooth, silky ball, about 10 minutes. Form the dough into a tight ball, set in the bottom of the mixer bowl, cover tightly with plastic wrap and set aside in a warm place until the dough has roughly doubled in size, about an hour.
  • For the pepperoni roll: Preheat the oven to 375 degrees F. Lightly oil a rimmed baking sheet.
  • Roll the dough out into a rectangle 1/4 inch thick. If the dough isn't stretching well, cover and let rest at room temperature for 30 minutes, then stretch again.
  • Leaving a 1/2-inch border, cover the dough with the sliced pepperoni. Cover the pepperoni with the mozzarella. Fold over the outside edges of the dough and roll up lengthwise like a jelly roll.
  • Transfer the roll to the baking sheet, seam-side down. Make 6 shallow cuts on an angle on the top of the roll. Brush with the oil and sprinkle with the Parmesan. Bake until golden, 25 to 30 minutes.

1-1/2 teaspoons fennel seed, crushed
1/2 teaspoon dried tarragon
1-1/8 teaspoons salt, divided
1/8 teaspoon crushed red pepper flakes, optional
1 package (3-1/2 ounces) sliced pepperoni
2-1/2 cups shredded part-skim mozzarella cheese
2-1/2 cups part-skim ricotta cheese
2 cups grated Parmesan cheese, divided
2 large eggs, lightly beaten
6 tablespoons minced fresh parsley, divided
3 tablespoons minced fresh basil or 1 tablespoon dried basil
1/2 teaspoon pepper

Steps:

  • Cook noodles according to package directions. , Meanwhile, in a Dutch oven, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain and transfer to a large bowl. 1/4 teaspoon oregano flakes
1/4 teaspoon seasoning salt
1/2 teaspoon parsley flakes (slightly crushed)

2 tablespoons margarine, melted
1 (3 1/2 ounce) package thinly sliced pepperoni
2 cups grated provolone cheese or 2 cups mozzarella cheese

Steps:

  • Roll dough out to 9 x 12 rectangle.
  • Combine all seasonings and margarine and brush lightly on dough (save some for top of bread).
  • Arrange pepperoni on top and cover with cheese.
  • Rollup like a jelly roll very tightly to look like a loaf of french bread.
  • Place seam on bottom, brush top with remaining butter mixture.

  • 1. Preheat oven to 350 degrees. Take each triangle of crencent roll dough and place about 6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. 2 tube(s) thin pizza crust (pillsbury)
1 pkg pepperoni
1 can(s) pizza sauce
1 pkg mozzarella cheese
1 lb italian sausage (optional)
1 lb hamburger (optional)

Steps:

  • 1. Roll out pizza crust on a greased cookie sheet
  • 2. spread pizza sauce on crust, leaving about 1 inch around the edge
  • 3. Layer pepperoni on sauce, I sometimes will also use hamburger and/or italian sausage on top the pepperoni. The nice thing is you can add whatever topping you like, its very versatile.
  • 4. Spread mozzarella cheese over the meat
  • 5. Begin rolling, roll up (like a cinnamon roll) and seal the edges. I usually tuck the ends under to keep the sauce from oozing out. I spinkle garlic salt on the crust before I bake it.
  • 6. Bake at 400 degrees for 20 min, then let rest for about 5 min. Slice in 1 inch slices and have pizza sauce for dipping.

12 lasagna noodles
70 pepperoni rounds
1/2 c shredded parmesan cheese
1 lb ground beef
4 clove garlic minced
salt and pepper
1/4 c dry red wine
24 oz spaghetti sauce
2 c shredded mozzarella cheese
fresh basil

Steps:

  • 1. Cook the lasagna noodles in salted boiling water for 10 minutes. Drain and lay out on parchment paper. Place 5 pepperoni pieces on each noodle. Sprinkle with shredded Parmesan cheese.
  • 2. Place the ground beef in a large skillet. Add the minced garlic and season with salt and pepper. Cook until beef is almost done. Add the wine and let most evaporate.
  • 3. Stir in the spaghetti sauce. Spoon some sauce in bottom of a 9x15 pan. With a slotted spoon, spoon meat sauce on each lasagna noodle.
  • 4. Roll up each lasagna noodle and place in pan. Pour the remaining spaghetti sauce over top. Place in a preheated 375 degree oven. Bake 15 minutes.
  • 5. Add the shredded Mozzarella and bake another 10 minutes. Garnish with the fresh basil

2 c all-purpose flour
1 tsp baking powder
1 tsp salt
1 Tbsp garlic powder
1/4 c vegetable oil
2/3 c milk
FILLING
pepperoni
shredded mozzarella cheese
TOPPING

  • 1. Preheat oven to 400 degrees. On a cookie sheet spray non-stick oil/butter.
  • 2. MIx all ingredients for the dough together until you get a nice firm ball.
  • 3. Roll out with a rolling pin. (I did not have to flour the surface or pin because of the oil in the dough).
  • 4. Put desired amount of cheese and pepperoni on top of dough.
  • 5. Roll up the dough.
  • 6. Pinch the ends.
  • 7. Brush with olive oil then top with Parmesan cheese.
  • 8. Bake for 45 minutes. Let cool then slice. *Optional: Serve with a side of marinara.
