1 cup fresh bread crumbs
1 tablespoon milk
1 teaspoon pizza seasoning
1/2 teaspoon salt
1 to 2 cloves garlic, minced
1/2 cup pizza sauce
1/3 cup finely chopped onion (1 small)
1/3 cup chopped pitted ripe olives
3 slices (1 oz each) mozzarella cheese, cut into strips

Steps:

  • Heat gas or charcoal grill. In large bowl, mix ground beef, bread crumbs, milk, pizza seasoning, salt and garlic. Shape mixture into 12 (4-inch) sausage-shaped rolls. Flatten each to 1/4-inch thickness to form patties.
  • In medium bowl, mix 1/4 cup of the pizza sauce, the onion and olives. Spoon about 1 tablespoon mixture evenly onto 6 patties, spreading to within 1/2 inch of edges. Top with remaining patties; pinch edges to seal.
  • Place meatloaves on grill; cover grill. Cook with medium heat 10 to 14 minutes, turning several times, until thermometer inserted in meatloaves reads 160°F (avoid inserting in filling). Brush meatloaves with remaining 1/4 cup pizza sauce and top each with cheese strips; cook 1 minute longer or until cheese is melted.

1 medium onion, grated
1/2 cup panko (Japanese bread crumbs) or regular dried bread crumbs
1 large egg, beaten
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons Worcestershire sauce
1 tablespoon whole-grain mustard
2 teaspoons kosher salt
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Freshly ground black pepper
4 thin slices pancetta (about 1- ounce), optional
4 small squares smoked mozzarella (about 2 ounces total)
1/4 cup tomato paste
2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
2 cups marinara sauce, jarred or homemade, hot

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
  • Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
  • Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
  • Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.

1 oz fresh mozzarella cheese, well drained
1 roma (plum) tomatoes, thinly sliced
1/4 cup fresh basil leaves, sliced
1 yellow bell pepper, seeded and sliced
1/4 cup sliced fresh mushrooms
1 slice Prosciutto
1 egg
2 tablespoons chopped parsley
2 tablespoons tomato sauce
2 tablespoons provolone cheese
4 ounces grated parmesan cheese
2 tablespoons olive oil

  • Preheat a gas grill to medium, or light a charcoal grill and allow it to come to the white ash stage.
  • Open the pizza dough package. Unroll and divide into 4 equal parts. Using your hands shape each into a 6 to 8-inch circle and set on a grill safe baking sheet or pizza pan.
  • For the margarita pizza, arrange 1 oz of mozzarella cheese, 2 slices of tomatoes and half of the basil on one crust.

2 teaspoons Italian herb seasoning
