GRILLED PESTO RAVIOLI

Grilled Pesto Ravioli image

Cooking the ravioli in one skillet all the way through means there is no need to boil, drain and reserve the starchy cooking water. The residual cooking water will thin out the pesto just enough for a loose coating and help the sauce thicken a touch without becoming gummy.

Tips:

  • Fresh basil is essential for the best flavor in pesto. If you can't find fresh basil, you can substitute 1 cup of packed fresh parsley or cilantro.
  • For a nut-free pesto, use sunflower seeds or roasted chickpeas instead of pine nuts.
  • To make the ravioli filling, you can also use cooked chicken, shrimp, or vegetables.
  • If you don't have a ravioli maker, you can use a rolling pin to roll out the dough and cut it into squares. Then, place a spoonful of filling in the center of each square and fold the dough over to form a triangle. Crimp the edges to seal.
  • Cook the ravioli in boiling salted water for 3-4 minutes, or until they float to the top. Serve immediately with your favorite sauce.
