Time 30m

Yield 6 to 8 servings

Number Of Ingredients 12

3 pounds Yukon gold potatoes, skin on, chopped into 1/2- to 3/4-inch pieces
Kosher salt
8 ounces thick-cut bacon, or more if you're really feeling bacony
2 large shallots, finely chopped
1 cup low-sodium chicken stock
1/2 cup white vinegar (or apple cider vinegar)
2 tablespoons pickle brine
2 tablespoons grainy mustard
1 1/2 tablespoons sugar
8 scallions, finely chopped
1/2 bunch fresh parsley, finely chopped
Freshly ground black pepper

Steps:

  • Add the potatoes and 1 tablespoon salt to a large pot and cover with water. Bring to a boil and simmer until the potatoes are tender, about 10 minutes. Drain and set aside.
  • Put a large skillet over medium-high heat. Add the bacon and cook until crisp, 8 to 10 minutes. Transfer to a paper towel and leave the bacon fat in the skillet (it should be a nice thin even layer; pour some off if it's more than that).
  • Add the shallots to the skillet and cook until soft, 5 to 7 minutes. Add the stock, vinegar, pickle brine, mustard and sugar and cook, whisking, until reduced by about a third and slightly thickened, about 7 minutes.
  • Fold in the potatoes to coat evenly. Chop the bacon and add to the potatoes. Add the scallions, parsley, a bunch of black pepper and salt to taste. Serve warm or at room temperature.

GERMAN POTATO SALAD

German Potato Salad image

Categories     Salad     Egg     Mustard     Potato     Side     Steam     Quick & Easy     Bacon     Gourmet     Dairy Free     Peanut Free     Tree Nut Free     Soy Free

Yield Serves 6

Number Of Ingredients 12

3 pounds large boiling potatoes (about 6)
1/2 pound of lean bacon (about 8 slices), cut crosswise into 1/2-inch pieces
1 cup finely chopped onion
1 cup thinly sliced celery
1 tablespoon sugar
2 tablespoons all-purpose flour
1 teaspoon celery seeds
1 tablespoon Dijon-style mustard
6 tablespoons cider vinegar
3 hard-boiled large eggs, chopped
1/3 cup chopped dill pickles
1/2 cup thinly sliced scallion greens

Steps:

  • Quarter the potatoes lengthwise and cut them crosswise into 1/2-inch pieces. In a vegetable steamer set over boiling water steam the potatoes, covered, for 10 to 15 minutes, or until they are tender, and transfer them to a large bowl. In a large heavy skillet cook the bacon over moderate heat, stirring, until it is crisp and transfer it to paper towels to drain. Pour off all but 4 tablespoons of the fat, to the skillet add the onion and the celery, and cook the mixture over moderately low heat, stirring, until the onion is softened. Add the sugar, the flour, and the celery seeds, and cook the mixture, stirring, for 30 seconds. Stir in the mustard, the vinegar, and 1/2 cup water, bring the mixture to a boil, stirring, and simmer it for 2 minutes, or until it is thickened. Season the dressing with salt and pepper, pour it over the potatoes, and stir in the eggs, the pickles, the bacon, and the scallion greens. Serve the salad warm.

Tips:

  • For the best flavor, use waxy potatoes like Yukon Gold or Red Bliss, as they hold their shape well in the salad.
  • Don't overcook the potatoes, as they will become mushy.
  • Let the potatoes cool completely before assembling the salad, as the warm potatoes will wilt the dill and other herbs.
  • Use a light hand with the salt and pepper, as the bacon and pickles already add a lot of flavor to the salad.
  • If you don't have fresh dill, you can use 1 tablespoon of dried dill weed.
  • To make the salad ahead of time, assemble it up to 24 hours in advance and store it in the refrigerator. Bring it to room temperature before serving.

Conclusion:

German potato salad is a delicious and versatile dish that can be served as a side dish or main course. It's perfect for picnics, potlucks, and barbecues. With its tangy dressing, crispy bacon, and fresh herbs, this salad is sure to be a hit with everyone at your table.
