ANN'S DIRTY RICE

Quick and easy dinner. A family favorite. This was my mother's recipe. In my humble opinion she was the best cook ever. This recipe is very versatile and can be seasoned so many different ways. Please feel free to try your own favorite seasoning combinations. My two boys who are now 27 and 31 and my husband request this simple dinner frequently and I have taught the boys to make it but they say mine tastes different. I love to cook and they love to eat. This is such a simple recipe and I usually double so they have plenty to take home with them. It heats up well.

LOUISIANA DIRTY RICE

My favorite dirty rice recipe straight from "A COOKS TOUR of SHREVEPORT" cookbook. Some of the ingredients are optional and if you prefer you can use white long grain rice in place of the brown,I prefer the brown, though I would not recommend using fragrant rice. This recipe is extremely versatile and can be used as main dish, along with salad and garlic bread,or as a side,or stuffing mixture.I like to season mine up with some additional creole seasoning such as zatarin's but would suggest tasting in between seasoning.ENJOY!

Tips:

  • Use long-grain rice for this recipe, as it will stay firm and separate when cooked.
  • Rinse the rice thoroughly before cooking to remove any starch and prevent it from sticking together.
  • Use a large skillet or Dutch oven to cook the rice, so that it has plenty of room to absorb the liquid and cook evenly.
  • Sauté the vegetables in the skillet before adding the rice, to bring out their flavor and add color to the dish.
  • Use a flavorful broth to cook the rice, such as chicken broth, beef broth, or vegetable broth. This will add extra flavor to the dish.
  • Season the rice with salt, pepper, and other spices to taste. You can also add a bay leaf or two for extra flavor.
  • Cook the rice over medium heat, stirring occasionally, until all of the liquid has been absorbed and the rice is tender.
  • Fluff the rice with a fork before serving to separate the grains.
  • Serve the dirty rice as a side dish or main course. It can be paired with a variety of proteins, such as chicken, beef, or shrimp.
