CHICKEN RICE BURRITOS
For a nice alternative to beef and bean burritos, I use this recipe, which I discovered several years back. If I fix the chicken mixture the night before, the next day's dinner is a snap. My 14-year-old gives these yummy burritos an enthusiastic "thumbs up"! -Suzanne Adams, Laguna Niguel, California

Tips:
- Use day-old rice for the best texture in your burritos. Freshly cooked rice will be too moist and make the burritos soggy.
- Shred your own chicken for the most flavorful results. Rotisserie chicken is a convenient option, but it won't have the same depth of flavor as shredded chicken that you've cooked yourself.
- Don't overfill your burritos. You want them to be able to fold and roll easily without falling apart.
- Wrap your burritos tightly in foil or plastic wrap before freezing them. This will help to prevent freezer burn.
- When reheating your burritos, wrap them in a damp paper towel and microwave on high for 1-2 minutes, or until heated through.
Conclusion:
Picante chicken rice burritos are a delicious and easy-to-make meal that can be enjoyed for breakfast, lunch, or dinner.
