½ cup butter, softened
2 tablespoons white sugar
½ cup firmly packed brown sugar
2 eggs
½ teaspoon rum extract
½ teaspoon salt
1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
¾ cup sweetened flaked coconut
½ cup chopped macadamia nuts
1 cup confectioners' sugar
½ teaspoon rum extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine flour, butter, and white sugar in a bowl. Beat with an electric mixer on low speed, scraping bowl often, until crust mixture resembles coarse crumbs. Press into the bottom of an 8-inch square baking pan.

2 8-ounce packages cream cheese, at room temperature
1/3 cup cream of coconut
1/3 cup sugar
Pinch of salt
2 large eggs, at room temperature
1/4 cup sour cream
1 teaspoon coconut extract
1 cup chopped dried pineapple
1 8-ounce can crushed pineapple in juice
2 tablespoons cream of coconut
1 tablespoon fresh lemon juice
2/3 cup water

Steps:

  • Make the crust: Preheat the oven to 350˚ F. Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly brush with melted butter. 2 to 3 teaspoons reserved pineapple juice

Steps:

  • Heat oven to 350°F. Grease bottom and sides of square pan, 8x8x2 or 9x9x2 inches, with shortening. Drain pineapple well, reserving 3 teaspoons juice for Pineapple Glaze. 1 cup 2% fat cottage cheese
1/2 cup sugar
1/4 cup block-style fat free cream cheese, softened
1 1/2 tablespoons grated lemon rind
1 tablespoon fresh lemon juice
1 tablespoon pineapple juice
1/2 teaspoon vanilla extract
1 dash salt
3/4 cup egg substitute
1 cup chopped fresh pineapple
1/4 cup unsweetened dried shredded coconut, toasted
