SWORDFISH ON BLACK BEAN AND PINEAPPLE SALSA

Swordfish on Black Bean and Pineapple Salsa image

In 1990, when Marian Burros brought this recipe to The Times, salsas were trendy, and as proof, she wrote, "that you don't have to have butter and cream to make something taste wonderful." That is no less true today, even if salsas are much more common in our cooking lives. If you're in a rush, grab some pre-cut pineapple at the market, and a can of black beans. (Drain them well.)

BLACK BEAN AND PINEAPPLE SALSA

Black Bean and Pineapple Salsa image

This is a basic chunky salsa recipe. I tried it with chopped scallions one day when I was out of fresh cilantro and was pleased with the result. It is *essential* to use fresh cilantro and jalapenos. If you don't have them, don't bother making it--seriously! Also, you can use crushed pineapple, but it makes the salsa quite watery. I recommend using tidbits instead.

Time 15m

Yield 16 serving(s)

Number Of Ingredients 7

2 (14 ounce) cans black beans, seasoned with olive oil and garlic, drained but not rinsed
2 (14 ounce) cans no-salt-added corn
1 (14 ounce) can no-salt-added diced tomatoes
1 (20 ounce) can pineapple tidbits, drained
2 fresh jalapenos, diced
1/3 cup chopped fresh cilantro
1/2 bunch scallion, chopped

Steps:

  • Remove the seeds and membranes from the jalapenos before dicing if you prefer less heat. Leave them in if you prefer more.
  • Rinse the cilantro well before chopping.
  • Combine all ingredients in a large bowl. Letting it stand for a few hours will help combine the flavors, but is not an essential step.

Tips:

  • Choose ripe pineapple: The sweetness and juiciness of the salsa depend on the quality of the pineapple. Choose a ripe pineapple that is fragrant and heavy for its size.
  • Use fresh cilantro and lime juice: These ingredients add a refreshing and zesty flavor to the salsa. If you don't have fresh cilantro on hand, you can use dried cilantro, but it won't have the same flavor.
  • Don't overcook the black beans: The black beans should be cooked until they are tender but still hold their shape. Overcooking them will make them mushy.
  • Chill the salsa before serving: This will allow the flavors to meld and develop. You can chill the salsa for at least 30 minutes or up to overnight.
  • Serve the salsa with your favorite dishes: Pineapple and black bean salsa is a versatile condiment that can be served with a variety of dishes. It's great on tacos, burritos, enchiladas, and grilled chicken or fish.

Conclusion:

Pineapple and black bean salsa is a delicious and easy-to-make recipe that is perfect for any occasion. It's a great way to use up leftover pineapple and black beans, and it's also a healthy and refreshing snack or appetizer. With its sweet, tangy, and savory flavor, this salsa is sure to be a hit at your next party or potluck. So next time you're looking for a new salsa recipe, give this one a try!
