TROPICAL DELIGHT BAR

Tropical Delight Bar image

Rich and fruity this three layer bar is sinfully good. A soft cake-like coconut cookie base topped with an apricot and pineapple layer covered with a crumbly coconut crisp topping. Even better using a yellow cake mix makes it easy. (Since the end of RSC on March 20, I have updated the directions a bit to reflect the helpful feedback provided.)

### Tips
  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling during the baking process.
  • Use ripe pineapple: Fresh, ripe pineapple will give your bars the best flavor. If you're using canned pineapple, be sure to drain it well and pat it dry before using.
  • Don't overmix the batter: Overmixing can result in tough bars. Mix the batter just until the ingredients are combined.
  • Bake the bars until they are set: The bars are done baking when a toothpick inserted into the center comes out clean.
  • Let the bars cool completely before frosting them: This will help to prevent the frosting from melting.
  • Store the bars in an airtight container: The bars can be stored at room temperature for up to 3 days, or in the refrigerator for up to 1 week.
### Conclusion Pineapple delight bars are a delicious and easy-to-make dessert that is perfect for any occasion. With their sweet and tangy pineapple filling and creamy coconut frosting, these bars are sure to be a hit with everyone who tries them. So next time you're looking for a quick and easy dessert, give pineapple delight bars a try. You won't be disappointed!
