1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 can (8 ounces) unsweetened crushed pineapple, drained
1 cup chopped walnuts
1/4 cup chopped maraschino cherries

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; gradually add to the creamed mixture and mix well. 1 tablespoon sugar
9 tablespoons butter (melted)
1¾ cup powdered sugar
4 ounces cream cheese (softened)
8 tablespoons butter softened
1 teaspoon clear vanilla extract
8 ounces Cool Whip
20 ounces crushed pineapple (in heavy syrup drained)

Steps:

  • Preheat the oven to 325°F.
  • Lightly spray an 8x8-inch baking dish (metal or glass is fine).
  • In a small bowl combine the 1¾ cups of crushed graham crackers, 8 tablespoons of melted butter, and 1 tablespoon of sugar.
  • Press the graham cracker mixture in the bottom of the baking dish.
  • Bake for 10 minutes. Allow the crust to completely cool.

1 cup reduced-fat graham cracker crumbs (about 5 whole crackers)
3 tablespoons butter, melted
1 package (.3 ounce) sugar-free lemon gelatin
1 cup boiling water
3 cups 1% cottage cheese
Sugar substitute equivalent to 7 teaspoons sugar
2 teaspoons cornstarch
1 tablespoon water
1 can (8 ounces) unsweetened crushed pineapple, undrained

Steps:

  • In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved.
