4 boneless pork loin chops (6 ounces each)
1/2 teaspoon seasoned salt
1 tablespoon canola oil
3/4 cup pineapple preserves
1/4 cup chardonnay or chicken broth
3 tablespoons Dijon mustard

Steps:

  • Sprinkle pork chops with seasoned salt. In a large skillet, heat oil over medium-high heat. Brown pork chops on both sides., In a small bowl, mix preserves, chardonnay and mustard; add to pan. Reduce heat; simmer, covered, 5-7 minutes or until a thermometer inserted in pork reads 145°. Let stand 5 minutes before serving.

2 tablespoons EVOO, plus more for drizzling
3 cloves garlic, finely chopped
1 large shallot, finely chopped
Grated zest of 1 lemon
Kosher salt and freshly ground pepper
2 shots dry sherry
1/2 cup chicken stock
1/3 cup honey
2 rounded tablespoons Dijon mustard
Handful fresh tarragon leaves, chopped
Four 1 1/2-inch-thick bone-in pork chops

Steps:

  • Heat the EVOO in a small pot over medium to medium-high heat. Add the garlic, shallots and lemon zest and season with a little salt and lots of pepper. Cook, stirring, for 2 minutes, then add the sherry and cook for 1 minute. Add the chicken stock and honey and simmer until reduced, 15 minutes. Stir in the mustard and tarragon, then remove the glaze from the heat.
  • Heat a grill pan or griddle over medium-high heat.
  • Coat the pork chops with EVOO and season liberally with salt and pepper. Grill the chops, turning occasionally, until cooked through, 12 to 15 minutes, basting liberally with the glaze during the last 5 minutes of cooking.

4 boneless pork chops ((at least 1 inch thick))
Salt & pepper (, to taste)
4 tablespoons olive oil (, divided)
1 small yellow onion (, thinly sliced)
¾ cup pineapple preserves (or jam)
¼ cup dry white wine ((or use extra chicken broth))
¼ cup chicken broth
1 tablespoon Dijon mustard
½ tablespoon fresh thyme (plus extra for garnish)

Steps:

  • Season the pork chops liberally with salt and pepper. Preheat a large skillet. Add 2 tablespoons of olive oil and cook the pork chops for about 3 minutes on each side over high heat, or until they are nicely browned. Set aside on a plate. They will not be fully cooked yet, and that's OK.
  • Add the remaining oil to the same skillet, and add the sliced onions. Turn the heat to medium and saute the onions for about 5-7 minutes, or until they soften and start to turn golden brown.

I found that so many other recipes called for cooking the pork chop for what seemed like an exceptionally long time. This has a fairly short cooking time and with the help of the pineapple sauce, it stays juicy and flavorful.

2 tablespoons vegetable oil
8 ounces crushed pineapple in juice
1/8 cup white sugar
1/8 cup brown sugar
1 teaspoon lemon zest
2 tablespoons lemon juice
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl combine all ingredients (except the pork chops and vegetable oil) and set to the side.

1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons honey
