Steps:
- Drain the juice from the pineapple (leave the rings in the can) and bring to a boil.
- Combine the boiling juice and the jello and mix really well. Do NOT add the cold water like the jello box directions say.
- Pour the mixture into the can of pineapple rings. Run a fork down the center to get the jello in between each ring. Chill. When ready to serve, invert the can on the serving dish, and slice between each ring.

Steps:
- 1. Drain pineapple juice into a saucepan. Leave rings in the can; set aside. Boil juice, add jello and stir until dissolved. Slowly pour jello over pineapple rings in the can. Tap can on counter-its hot so use pot holder; this is to remove and bubbles.
- 2. Refrigerate until jello is set. Just before serving, run hot water over outside of can or remove other end of can with can opener; like you would for cranberry jelly.
- 3. When Jello is loose enough to slide out of can onto plate slice between rings and arrange on lettuce leaves in a circle. Fill center of plate with cottage cheese, sprinkle with a little apple pie spice.
- 4. If using as a dessert place each sliced ring on individual dessert plate or dish and top with a scoop of pineapple sherbet or vanilla ice cream drizzle with caramel topping.
Tips:
- Use fresh pineapple: Fresh pineapple gives the jello rings a more intense flavor and a better texture. If you're using canned pineapple, be sure to drain it well before using it.
- Chill the jello rings thoroughly before serving: This will help them set properly and give them a firmer texture.
- Garnish the jello rings with fresh fruit or whipped cream: This will make them look more festive and appealing.
- Serve the jello rings with a scoop of ice cream or sorbet: This will make them even more refreshing and delicious.
Conclusion:
Pineapple jello rings are a classic dessert that is easy to make and always a hit. They're perfect for any occasion, from a casual get-together to a formal dinner party. So next time you're looking for a delicious and refreshing dessert, give pineapple jello rings a try. You won't be disappointed.
