  • Pour into a greased 9x13-inch baking pan.
  • Cook for about 45 minutes or until a toothpick comes out pretty clean.
  • Note: this cake turns a dark amber color while baking. One might wonder if the cake is getting overcooked when they see this drastic change in color. This is a good thing so don't stress.

  • In a medium sized bowl beat all icing ingredients until smooth.
  • When cake has cooled, spread it on.
  • Keep this cake in the refrigerator or the icing will go bad!

Tips:

  • Use fresh pineapple for the best flavor. Fresh pineapple is sweeter and juicier than canned pineapple, and it will give your cake a more vibrant color.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean. If the toothpick comes out with batter or crumbs attached, the cake needs to bake longer.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
  • If you don't have cream cheese, you can substitute another type of frosting, such as buttercream or whipped cream.

Conclusion:

Pineapple nectar cake with cream cheese icing is a delicious and easy-to-make cake that is perfect for any occasion. The cake is moist and flavorful, and the frosting is light and fluffy. This cake is sure to be a hit with everyone who tries it.
