1 lb chicken breasts pounded to 1/2 inch thickness
Chili Lime Rub:
2 tablespoons olive oil
1 teaspoon chili powder
1-4-1/2 teaspoon chipotle chili powder (optional for more heat)
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon brown sugar
fresh-squeezed lime juice from 1 lime (about 2 tablespoons)
Lime zest from 1 lime
Grilled Pineapple Salsa:
1/2 ripe pineapple, trimmed and sliced
1 large red bell pepper, seeded and quartered
1/2 small red onion, peeled and cut in half (so you have 2 quarters of whole onion)
1 whole jalapeno
1 tablespoon lime juice
1/4 teaspoon ground ginger
1/4 teaspoon ground cumin
salt and pepper to taste
olive oil

1 medium avocado
1/2 cup sour cream

  • 1. CHICKEN DIRECTIONS - In a small bowl, whisk chicken rub ingredients together and rub evenly all over chicken breasts. Time permitting, allow chicken to sit for 30 minutes at room temperature or refrigerate up to 8 hours then bring to room temperature for before cooking. STOVETOP DIRECTIONS If chicken has been refrigerated, let sit at room temperature for 15-30 minutes (time permitting). Heat a large non-stick skillet over medium high heat. Once very hot, add chicken and cook, undisturbed for 3-5 minutes, or until nicely browned (or blackened if you prefer) on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 5-7 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to a cutting board and let rest 5 minutes before slicing. 2. GRILLED PINEAPPLE SALSA DIRECTIONS: Grease grill and heat to medium high heat. Drizzle red onions with olive oil. Drizzle red bell pepper quarters and jalapeno with olive oil to lightly coat. Working in batches as needed depending on grill size, grill pineapple and vegetables at medium high heat until tender and lightly charred all over, about 12 minutes for the onions, turning occasionally, about 8-10 minutes for the pineapple, or until caramelized, flipping once, 6 minutes for the red bell peppers, flipping once, and jalapeno for 3-5 minutes, turning occasionally. Once cool enough to handle, dab off any excess oil with paper towels from vegetables and chop pineapple (cutting around core), red bell peppers, and onions. Devein and deseed jalapeno and dice, reserving some of the seeds if desired. Toss pineapple, red bell pepper, red onion, jalapeno, cilantro, lime juice, ginger, cumin and salt and pepper to taste in a large bowl. If you would like it spicier, add some of the jalapeno seeds to taste. Can be served immediately or even better chilled. 3. AVOCADO CREMA DIRECTIONS: To make the Avocado Crema, add all the Crema ingredients to your blender and blend until smooth, scraping sides down as needed. 1 medium yellow onion, 1 peeled
Kosher salt and fresh ground pepper
1 (8-ounce) can pineapple chunks, drained and chopped
1 small red onion, diced
1 jalapeno pepper, seeded and chopped
2 tablespoons chopped cilantro
1 tablespoon chili powder
2 tablespoons lime juice
3 scallions, chopped
8 flour tortillas (reserve 2 for round 2 recipe Tortilla Pizza and 2 for Tortilla Soup)
1 can red or black beans, drained and rinsed
1 cup shredded jack cheese

Steps:

  • In a large pot, put the chicken, 1 whole onion, and large pinch of salt and cover with cold water. Bring to a boil then reduce to a simmer and cook until the chicken is cooked through, about 1 hour.
  • While the chicken is cooking, make the salsa by mixing together the diced red onion, pineapple chunks, jalapeno, cilantro, chili powder, lime juice, and season with salt and pepper. Cover and refrigerate until ready to serve.
  • Remove the chicken and allow it to cool. Strain the cooking liquid and reserve it and the onion for the round 2 recipe, tortilla soup. When the chicken is cool enough to handle, remove the meat, discarding the bones and skin. Save 1 cup of meat for the tortilla soup.
  • Wrap the tortilla in a damp towel and microwave for 45 second or until warm and pliable. Heat the beans in a small pot over low heat.

1-1/2 tsp. chopped garlic
1/2 jalapeno, seeded and chopped
1 tsp. oregano
1 large shallot, chopped
1/2 cup chopped cilantro, loosely packed
3 Tbsp. oil
1 tsp. salt
4 large skinless, boneless chicken breast halves
PINEAPPLE SALSA
1-1/2 cups diced pineapple
3 Tbsp. finely diced red onion
1/2 tsp. minced jalapeno
salt & pepper to taste
2 Tbsp. minced cilantro leaves
2 Tbsp. cilantro leaves for garnish
4 lime wedges, for garnish

Steps:

  • CHICKEN Blend garlic, jalapeno, oregano, shallot, cilantro, oil and salt in food processor or blender. Put chicken breasts in resealable plastic bag and add garlic mixture. Seal tightly and rub bag to thoroughly coat breasts with mixture. Put bag inside another resealable plastic bag, seal tightly and freeze up to 1 month. * Thaw chicken in refrigerator several hours or overnight. When thawed, add lime juice. Let rest 1/2 hour at room temp. before grilling. PINEAPPLE SALSA Combine pineapple onion,jalapeno and salt & pepper in bowl and set aside. Just before using salsa, add 2 Tbsp. minced cilantro, adjust seasonings and stir well. Grill or broil chicken on both sides until just cooked through (do not overcook), about 6 min. per side, depending on heat of grill and thickness of chicken. Serve hot or at room temperature, topped with pineapple salsa, evenly divided. Garnish with remaining 2 Tbsp. cilantro and lime wedges. 318 calories per serving *I got this recipe out of the LA Times. I made this while I was on a low-carb eating plan. The recipe originally called for "low carb baking mix" (flour sub). It's not as sweet as you'd expect, it's more savory. If you're looking for sweet, use 1 cup of pineapple juice instead of the chicken or veggie broth. Each serving is just a shade over 200 calories!

4 chicken breast halves, skinless and boneless
1 jar(s) newman's own pineapple salsa
1 c chicken or vegetable broth, low salt
1/4 c all purpose flour
1/8 c olive oil
1/2 tsp white pepper
1/2 tsp ginger powder
1/4 tsp salt

Steps:

  • 1. Using either a sealed plastic freezer bag or two sheets of waxed paper, pound each chicken breast out to about a 1/4 inch thickness with a meat mallet or rolling pin.
  • 2. Combine dry ingredients with a whisk in a shallow dish.
  • 3. Dredge the chicken breasts in flour mix to coat and set aside on a clean plate.
  • 4. In a large sautee pan heat the olive oil over medium heat until the surface shimmers slightly.
  • 5. Carefully lay chicken breasts into the pan. Do not overcrowd the pan; you may have to cook one or two breasts at a time depending on the size of your pan.
  • 6. Cook each breast for 3 minutes per side or until the flesh feels firm.
  • 7. Remove cooked breasts to a clean plate and loosely cover with foil or another clean inverted plate until all the breasts are cooked.
  • 8. When done cooking chicken, slowly add broth to the pan CAREFULLY! The pan will steam up, so keep back to avoid burns.
  • 9. Deglaze the pan by gently scraping the bottom of the pan as the broth warms. This releases the yummy brown caramelized bits from cooking the chicken.
  • 10. Bring broth to a simmer and let go for about 5 minutes to reduce slightly.
  • 11. Stir in salsa to create your sauce. This usually comes out brownish because of the caramelized bits :)
  • 12. Lay the chicken breasts back in the pan with the sauce & let simmer for a minute.
  • 13. Turn the chicken and let simmer another 2 minutes.
  • 14. Remove chicken from pan and serve with 2-3 tablespoons of sauce on top.
  • 15. This is yummy with steamed broccoli with a squeeze of lemon juice or over rice.

BLACKENED CHICKEN AND PINEAPPLE SALSA

1 1/2 pounds chicken breasts
2 teaspoons blackened seasoning
1/2 teaspoon salt
Pineapple Salsa:
1 1/2 cups fresh pineapple, diced
1/2 cup red bell pepper, diced
1/2 cup red onion, diced
1/4 cup chopped fresh cilantro
2 Tablespoons lime juice (about 1 lime)
Dash of salt
Homemade Blackened Seasoning:
1 1/2 Tablespoons paprika
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon ground thyme
1 teaspoon cayenne pepper
1 teaspoon dried basil
1/2 teaspoon oregano

Steps:

  • In a small bowl, mix together all ingredients for blackened seasoning. Store in an air-tight container in a cool, dry place.
  • Preheat grill to medium-high heat.
  • Rub both sides of chicken breast with blackened seasoning and salt. Cook chicken on pre-heated grill sprayed with non-stick cooking spray. Cook each side for 6-8 minutes or until internal temperature reaches 165 degrees.
  • Mix together ingredients for pineapple salsa. Remove chicken from grill and serve topped with pineapple salsa.
