Provided by Cassie *

Categories     Potatoes

Time 35m

Number Of Ingredients 11

3 - 4 large sweet potatoes - peeled and sliced 3/4 inch thick
1/2 tsp salt for potatoes
1/2 c + 2 tablespoons butter
1 1/2 c brown sugar
1/4 c sugar
3/4 tsp cinnamon
1/2 tsp nutmeg
pinch salt
1 small can - pineapple chunks - drained- reserving 1/4 cup juice
1 tsp vanilla
pecans - optional- we didn't add them this time

Steps:

  • 1. In a medium saucepan, add potatoes and 1/2 tsp salt, cover with water. Bring to boil, then reduce to simmer. Cook until fork tender and drain. In another saucepan, add the butter, brown sugar, pinch salt, pineapple juice, cinnamon and nutmeg. Bring to a boil and simmer until thickened some - won't be real thick, more like a glaze. If you want a thicker glaze, add a small amount of corn starch to the pineapple juice before adding. Once sauce is to desired thickness and potatoes are cooked. Add the drained pineapple to the glaze and cook until heated through. Stir in the vanilla. Gently toss the sweet potatoes with the glaze, being careful not to break up potatoes too much. Heat through for a few minutes and pour into a serving dish. Sprinkle with pecans if using. Serve immediately.

Make and share this Upside-Down Pineapple Sweet Potatoes recipe from Food.com.

Provided by FLKeysJen

Categories     Yam/Sweet Potato

Time 2h20m

Yield 8 serving(s)

Number Of Ingredients 9

2 1/2 lbs sweet potatoes (about 3 large)
4 tablespoons unsalted butter (1/2 stick)
1/2 cup lightly packed brown sugar
7 slices canned pineapple rings, drained and dried
2 large eggs, beaten
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1 teaspoon salt
fresh ground pepper

Steps:

  • Preheat the oven to 350 degrees. Coat a 9" round cake pan with cooking spray and set aside.
  • Rub the sweet potatoes with a few drops of oil or a touch of cooking spray. Place the potatoes on the oven rack and bake until they are soft when squeezed, 40-60 minutes. Remove the sweet potatoes and set aside until cool enough to handle.
  • Meanwhile, in a small saucepan over medium heat, melt the butter with the brown sugar. Pour the mixture into the prepared pan, tilting to coat the bottom evenly. Arrange six pineapple slices in a ring around the edge and one in the center of the pan.
  • Peel the potatoes and place the flesh in a mixing bowl. Mash roughly with a fork. Add the eggs, cinnamon, baking powder, salt and 5-6 grinds pepper, and whisk until well-blended. Spoon the mixture into the baking pan, spreading it evenly over the pineapple and smoothing the top. Tap the pan sharply on the countertop three or four times to knock out air bubbles.
  • Bake until the top looks dry and feels springy to the touch, 40 minutes. A knife inserted in the center should come out clean. Cool in the pan on a rack for 10 minutes. Run a knife around the side of the pan. Insert a serving plate over the pan and, holding the pan and the plate firmly with oven mitts, flip them so the potatoes drop on to the plate, pineapple side up. Lift off the pan. Serve warm.

YAMS OR SWEET POTATOES WITH PINEAPPLE AND NUTS

Yams or Sweet Potatoes with Pineapple and Nuts image

This is a dish that we make every Thanksgiving and is quite easy and tasty. There usually isn't too much left. And the orange yam color adds some interest to the table. A lot of this recipe is dependent on the amount of yams and 'eyeballing it' so the measurements aren't always exact. This can also be made ahead of time and reheated. Servings are estimated as we make this for about 22 adults and 8 children under 8 yrs of age. Please note that if recipe is to be made ahead of time and reheated, it should be on the moist side since it will need the additional liquid during reheating.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size. This will help them cook evenly.
  • Use fresh pineapple: Fresh pineapple will give your dish the best flavor. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Don't overcook the sweet potatoes: Sweet potatoes are best when they are cooked through but still slightly firm. Overcooking will make them mushy.
  • Add some spice: A little bit of spice can help to balance out the sweetness of the pineapple and sweet potatoes. You can add a pinch of cayenne pepper, chili powder, or cumin to your dish.
  • Serve immediately: Pineapple sweet potatoes are best served immediately after they are cooked. This will help to preserve their flavor and texture.

Conclusion:

Pineapple sweet potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are a great way to use up leftover sweet potatoes, and they can be easily customized to your liking. So next time you're looking for a new way to enjoy sweet potatoes, give this recipe a try!
