A recipe from my Great Aunt Alta's collection. This is one she clipped from the Chicago Tribune and it had won the "$5 Favorite Recipe Prize," a weekly feature in the newspaper. I am not sure if she ever made this one or not, but I thought it sounded good enough to share. These days, I would use a few spoonfuls of olive oil to brown the steak instead of the bacon drippings originally called for.

1 (3 lb) round steaks, 1 1/2 inch thick
1/3 cup all-purpose flour
1 1/2 teaspoons salt, to taste
1 teaspoon paprika
1/4 teaspoon black pepper, to taste
1/4 cup bacon drippings or 1/4 cup shortening
1 (20 ounce) can pineapple rings, undrained
water, as needed
1 (1 3/8 ounce) envelope dry onion soup mix
1 green bell pepper, seeded,cut into thin rings
1 tomatoes, cut into eigths
1 tablespoon cornstarch
1/4 cup cold water

Steps:

  • Set meat on a wax paper lined cutting board.
  • Mix together flour with salt, paprika, and pepper.
  • Cover meat with the seasoned flour; using a meat mallet, pound the steak, turning the meat over several times, until all of the flour has been pounded into the meat.
  • Brown steak on both sides in bacon dripppings in a large skillet; drain off any excess fat.
  • Drain pineapple, reserving juice.
  • Add enough water to the pineapple juice to measure 2 cups liquid.
  • Whisk together this liquid with the onion soup mix and then pour over the steak.
  • Cover and simmer for about 2 hours, or until meat is tender.
  • Top with pineapple rings, green pepper, and tomato wedges during the last 10 minutes of cooking time.
  • Remove steak to a platter and keep warm.
  • Whisk together the cornstarch and the 1/4 cup cold water, then add to the pan juices, stirring constantly until slightly thickened.
  • Pour sauce over the steak and serve.

1 (8 ounce) can pineapple chunks - drained with juice reserved
2 teaspoons rice wine vinegar
2 tablespoons soy sauce
1 teaspoon olive oil
1 teaspoon vanilla-flavored vodka
½ teaspoon ground ginger
½ teaspoon brown sugar
½ teaspoon white sugar
1 (1 1/2-pound) beef sirloin steak, cut into 1/4-inch strips
1 ½ cups water
½ cup long grain white rice
2 tablespoons olive oil

Steps:

  • Stir together 1/3 cup reserved pineapple juice, rice wine vinegar, soy sauce, olive oil, vanilla vodka, ginger, brown sugar, and white sugar in a mixing bowl until blended. Adjust the sugar to taste.
  • Place the steak strips in a large, resealable plastic bag. Pour in the pineapple juice mixture and seal the bag. Turn the bag gently to evenly coat steak with the marinade. Refrigerate 3 to 4 hours.
  • Bring water to a boil in a saucepan over medium-high heat. Add the rice and stir. Reduce heat, cover and simmer 20 minutes.
  • Heat 2 tablespoons olive oil in a skillet over medium heat. Remove steak strips from marinade and place in the skillet. Cook and stir the steak strips until browned and no longer pink, about 2 minutes per side. Remove from the heat, cover and keep warm.
  • Place the pineapple chunks in a separate skillet. Cook over medium heat until slightly soft and heated through, about 4 minutes. To serve, divide the rice between two bowls, top with steak strips and pineapple chunks, and toss briefly.

1/2 cup plus 2 tablespoons all-purpose flour, divided
2 teaspoons salt, divided
3/4 teaspoon pepper, divided
1/2 teaspoon garlic salt
2 pounds beef top round steak, cut into serving-size pieces
3 tablespoons canola oil
2 cups chopped green pepper
1 cup chopped celery
1 cup chopped onion
1 garlic clove, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 cup beef broth
1 tablespoon reduced-sodium soy sauce
1/4 cup cold water

Steps:

  • In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. In a small bowl, combine water and remaining flour until smooth; gradually stir into juices. Bring to a boil over medium heat. Cook and stir sauce for 2 minutes or until thickened.

3 lbs round steaks, cut 1 inch thick (or more)
2 medium yellow onions, cut in long slivers
3 green peppers, cut into 2-inch hunks
1/4 teaspoon garlic powder
1 (25 ounce) can whole tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon Adolph's meat tenderizer
1 1/2 teaspoons black pepper
1 1/2 cups flour
3 tablespoons Crisco
3 tablespoons butter
salt (for peppers and onions)
water (if pan sauce begins to dry while baking)

Steps:

  • Preheat oven to 325°F.
  • Grease interior of covered roasting pan or Dutch oven.
  • Cut round steak into serving size pieces (approximately 4 inch squares).
  • Sprinkle both sides of steak pieces with Aldolph's tenderizer.
  • Place flour into plastic zip lock bag and place on a chopping block (or if you don't mind the flour mess clean-up, just place half the flour on a sheet of waxed paper that's on top of a chopping block).
  • Place 4 or 5 pieces of steak into the bag of flour, turning over several times to coat, then using the edge of a dinner plate, pound the flour into the meat.
  • Do this to both sides several times.
  • Remove the "pounded and floured" meat, and continue with remaining pieces.
  • Heat heavy skillet until droplet of water rolls when dropped into hot skillet.
  • Now add the Crisco; when Crisco is melted, add the butter.
  • Quickly fry steak pieces, in batches, until browned good on both sides.
  • Remove to plate until all steak has been browned.
  • Lower heat, add onions and green peppers, about 1/4 tsp black pepper with 1/4 teaspoon salt, and scant 1/4 teaspoon garlic powder.
  • Remember NOT to salt the steak if you've used Aldolph's tenderizer, but you do need to salt the onions and green pepper.
  • Cook the peppers and onions until lightly browned on edges.
  • Do not let burn!
  • Pour in the canned whole tomatoes and tomato sauce.
  • Break up tomatoes a bit with a spoon, leaving some in rather large pieces.
  • When this comes to a boil, remove from heat.
  • Pour tomato, green pepper, onion mixture into bottom of the greased roasting pan.
  • Place fried steak over the top.
  • Cover and bake 1 3/4 hours.
  • Check liquid about half way through baking time, add 1/4-1/2 cup water if necessary to keep sauce from drying out.
  • You want to maintain a gravy.
  • Serve in large "Country Style Bowl" with side dish of buttered and creamed mashed potatoes.
  • My family enjoys mayo cole slaw as the side dish with the Swiss Steak.
  • AND lots of bread and butter to dunk into the "gravy".

When it's done, you will have a yummy gravy, and will have to carefully dig for the steak pieces.

2 cups all-purpose flour

2 pounds beef cube steaks
3 green bell pepper, sliced into rings

4 (14.5 ounce) cans crushed tomatoes

Steps:

  • Heat the oil in a skillet over medium heat. In a bowl, mix the flour, salt and pepper, and paprika. Dredge the steaks in the flour mixture, and place in the skillet. Brown steaks on both sides, and remove from heat.
  • In a slow cooker, alternate layers of steak, green bell pepper, red bell pepper, onion, and tomatoes.
  • Cover, and cook 6 to 8 hours on Low, until steaks are very tender.

3 tablespoons all-purpose flour
1/2 teaspoons salt

2 medium onions, sliced
2 celery ribs, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons Worcestershire sauce
1/4 teaspoon dried oregano
Hot cooked noodles, optional

Steps:

  • Cut meat into serving-size pieces. In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat. , In a large skillet, brown meat in oil on both sides. Top with onions and celery. Combine the tomatoes, Worcestershire sauce and oregano; spoon over vegetables. Cover and simmer for 1-1/2 to 2 hours or until meat is tender. Serve with noodles if desired.

400g rump steak, thinly sliced
3tbsp soy sauce
2tbsp soft brown sugar
1tbsp chilli sauce
1tbsp rice wine vinegar
2tsp vegetable oil
thumb-sized piece ginger, cut into fine matchsticks
4 spring onions, cut into 3cm lengths
200g pineapple, cut into chunks
handful coriander leaves, to serve
rice and greens, to serve (optional)

Steps:

  • Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 mins.
  • Heat a wok with 1 tsp of the oil. Lift the steak from the marinade and sear, in batches, then remove. Add a bit more oil and fry the ginger until golden. Add the spring onions and pineapple, and return the steak to the pan. Stir to heat through for 1 min, then add any remaining marinade. Keep stirring until the marinade becomes thick and everything is hot. Serve sprinkled with coriander, and with rice and greens, if you like.
