2 pounds fresh green beans, trimmed
6 tablespoons lemon juice
1 medium onion, chopped
¾ cup olive oil
1 (16 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons dried parsley
1 cup water
salt and pepper to taste
1 bay leaf

Steps:

  • Place the green beans in a pot, and mix in the lemon juice, onion, olive oil, tomatoes, tomato sauce, parsley, water, salt and pepper, and bay leaf. Cook 45 minutes over medium heat, stirring occasionally, until sauce is thickened. Remove bay leaf before serving.

1 tablespoon olive oil
1 (15 ounce) can kidney beans
1 ½ cups tomato sauce
4 ½ cups water, divided
½ teaspoon dried oregano
½ teaspoon dried basil
1 pinch dried thyme
salt and pepper to taste
5 teaspoons adobo seasoning, divided
2 cups uncooked white rice

Steps:

  • In a large saucepan combine olive oil, kidney beans, tomato sauce, 1/2 cup water, oregano, basil, thyme, salt, pepper and 2 teaspoons adobo. Simmer on low heat.
  • Meanwhile, bring 4 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes, or until rice is cooked and all liquid is absorbed. Stir in remaining 3 teaspoons adobo. Serve beans over the rice.

Very easy, I think it tastes best when cooked slow and I found with my slow cooker I had to cook for an hour or two longer than the recipe says. My hubby loves this recipe! If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.

1 lb dried navy beans
5 cups water
5 -6 pieces bacon
1 cup tomato juice
1/2 cup onion, chopped
1/4 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
1/2 teaspoon dry mustard
1/4 teaspoon seasoning salt
1 1/2 teaspoons pepper, ground mixture
1 teaspoon chili powder

Steps:

  • Soak beans overnight in large bowl.
  • Drain, put in large pot and cover with 5 cups of water. Simmer over medium low heat until tender, about 1 hour.
  • Drain beans reserving 2 cups of liquid.
  • Add beans to slow cooker.
  • In a skillet over medium high heat fry bacon until browned, chop and stir into beans.
  • Combine juice, chopped onion, ketchup, molasses, brown sugar, dry mustard, salt, pepper and chili, add to beans and stir well.
  • Cover and cook on low for 7 to 9 hours. Until beans are tender and flavourful.
  • Check and add a little of the reserved liquid as necessary.

Pink beans its just a personal preference and what my husband likes!

1 (15 1/2 ounce) can pink beans
1 clove garlic, diced
1 carrot, diced
1 small potato, diced
1/2 green pepper, diced
olive oil
1 -2 cup chicken stock
1 tablespoon oregano
1 (6 ounce) can tomato sauce or 1 (6 ounce) can tomato paste

Steps:

  • Put a little olive oil in the bottom of a pot, enough to cover the bottom.
  • Add the diced carrots, potatoes, garlic, and green peppers to the olive oil. Add the oregano and sazon (optional) and stir until its barely lightly browned.
  • Add the pink beans and tomato sauce while stirring. Let simmer for a minute, then add the chicken stock. You want the chicken stock to cover everything in the pot and be about an inch or so above the ingredients in the pot.
