1/3 cup sugar

12 marshmallows, large

  • Add water to liquid from pineapple to make 2 cups liquid.

1 (.25 ounce) package unflavored gelatin
½ cup white sugar, divided
⅛ teaspoon salt
2 eggs, separated
1 ¼ cups milk
¼ teaspoon peppermint extract
3 drops red food coloring
1 cup whipping cream, whipped

Steps:

  • In a medium saucepan over no heat, combine gelatin, 1/4 cup sugar and salt, mix well and reserve. In a medium bowl, beat together egg yolks and milk, add to gelatin mixture.
  • Cook gelatin and egg mixture in saucepan over low heat; stir constantly until the gelatin dissolves and mixture thickens slightly or about 5 minutes. Remove from heat and add peppermint extract or candy.
  • Add food coloring and mix. Chill in refrigerator until mixture is slightly thicker than the consistency of unbeaten egg whites.
  • In a small bowl, beat egg whites until stiff, but not dry. Gradually add remaining sugar and beat until very stiff and fold into gelatin mixture; fold in whipped cream.
  • Turn into a 5-cup heart-shaped mold; chill until firm. Unmold and garnish with additional whipped cream, if desired; serve.

2 envelopes unflavored gelatin
1/2 cup cold water
1 cup cream of coconut
1 cup sour cream
3/4 cup lemon-lime soda
3/4 cup sweetened shredded coconut
1/2 cup chopped macadamia nuts
Pineapple chunks and freshly shredded coconut, optional

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a large saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook and stir over low heat until gelatin is completely dissolved, about 2 minutes., Remove from the heat; stir in the cream of coconut, sour cream, soda and reserved pineapple juice. My grandmother made this dessert salad every Christmas I can remember. The original called for making Dream Whip, and this version has been updated to use Cool Whip. She always just made this from eyeing and tasting, so use your judgement as you add ingredients. Pecan pieces can be used instead of halves, if desired.

1 (10 ounce) jar maraschino cherries
1 (8 ounce) can crushed pineapple, drained
8 ounces cream cheese, softened
2 ounces pecan halves
2 (8 ounce) containers Cool Whip
1 (10 1/2 ounce) package colored miniature marshmallows

Steps:

  • Drain the maraschino cherries, reserving the juice. Set the juice aside. Chop the cherries in half. Set aside.
  • Pour in some of cherry juice to the cream cheese and beat with a mixer. Keep adding juice until it reaches desired taste. (Use a bit more than you think is necessary, because the taste will be mellowed out a bit with the Cool Whip.).
  • Stir in the cherry halves, pineapple, and pecans.

1 ¼ cups boiling water
1 tablespoon white sugar
1 pinch salt
