1 cup dried pinto beans
1 pound ground beef
1 teaspoon seasoned salt (such as Spike® seasoning)
1 tablespoon olive oil
1 onion, chopped
1 tablespoon minced garlic
1 tablespoon ground cumin
1 tablespoon dried cilantro
2 teaspoons dried Mexican oregano
1 (14.5 ounce) can petite diced tomatoes
4 cups chicken broth
1 cup water, or more as needed
2 tablespoons tomato paste
½ cup diced green onions
½ cup chopped fresh cilantro, or more to taste
2 tablespoons freshly squeezed lime juice

  • Place pinto beans into a pot and cover with several inches of cool water; let soak, 8 hours to overnight.

2 tablespoons olive oil, divided
1 pound low-fat ground beef
1 teaspoon Spike seasoning
1 onion, chopped
1 tablespoon minced garlic
2 teaspoon dried Mexican oregano
1 tablespoon ground cumin
1 tablespoon dried cilantro, optional
3 cups homemade chicken stock, or 2 (14.5-ounce) cans chicken broth and reduce slightly to 3 cups
1 cup liquid from pressure cooking beans or 1 cup water
2 tablespoon tomato paste
1 (14.5 ounce) can petite diced tomatoes
1/2 cup sliced green onions
1/2 cup chopped fresh cilantro, plus more to taste
2 tablespoons fresh squeezed lime juice

  • Put 1 cup dried pinto beans in pressure cooker with 2 teaspoons olive oil, add water to fill pressure cooker half full, lock lid, and pressure cook at high pressure 15 minutes. Add chicken stock to frying pan and simmer a minute, scraping off any browned bits and adding that liquid to pressure cooker, along with 1 cup reserved bean cooking liquid or water, if using canned beans. Add beans, tomato paste and can of tomatoes to pressure cooker. Lock lid and pressure cook for 2 minutes at high pressure. Start to time after high pressure is reached. Turn off heat and let pressure release naturally, about 15 minutes. When pressure is released, add sliced green onion, chopped fresh cilantro, and lime juice, turn heat on and cook with lid off for about 5 minutes. Serve hot, with additional chopped cilantro to add at the table if desired.

My mother made this recipe for pinto beans with ground beef for us as kids and I have used it many times in feeding my 4 boys. When the space shuttle fell, our small town filled up overnight with searchers for the space shuttle debris, and this is one of the recipes that I used to help feed the masses. It was a hit every time. We served it with cornbread and a side salad for a complete meal or over a bed of rice. My mom would top off a bowl of this with homemade sweet salsa. Yum!

1 medium onion, chopped
Bouquet garni (thyme and pars- ley sprigs and bay leaf tied in a cheesecloth bag)
4 to 6 dried California or ancho chilies
Coarse salt and freshly ground pepper to taste
2 1/2 pounds stewing beef, cut in 1-inch cubes and trimmed of fat
2 tablespoons olive oil
3 cloves garlic, peeled
2 bay leaves
1 1/2 tablespoons browned toasted cumin seeds
1 tablespoon fresh oregano
2 to 3 tablespoons Hungarian paprika
1 tablespoon sugar

Steps:

  • Cover beans with water, bring to boil and drain. Add fresh water to cover. Add onion and bouquet garni and simmer gently, covered, for 30 minutes.
  • Using rubber gloves to protect your hands from juices, which can sting your eyes, remove stems and seeds from the chilies. Tear them into strips and place in large bowl. Add three cups boiling water and let the chilies soak for 30 minutes.

1 (7 ounce) can green chili peppers
