1 loaf French bread, sliced lengthwise
1 cup salted butter, Softened

Steps:

  • Preheat oven to 350 degrees.
  • Spread one stick of softened butter on each half of the loaf (That's one stick per half loaf. Yes, you read that right. The idea here is that every speck of the surface of the bread needs to be coated.).
  • Place on a cookie sheet and bake for 10 minutes, or until butter is melted and starting to soak into the bread.
  • Crank on broiler and broil bread for 3 to 5 minutes, watching the whole time. Remove when butter has started to brown and blacken. Don't under-broil it! The flavor really kicks in when the butter's color changes (The goal here is to broil the bread to the point that the butter becomes very dark brown and, in just a few areas, begins to burn. When that happens, the flavor shows up. If you don't take it to the next level, it will just be buttered, warm bread. Which is fine, and all...but it's not The Bread).
  • Slice into strips and serve immediately (When I serve this, I slice it on a cutting board into relatively thin (because it's so rich) strips).

2 cups cubed day-old bread (1/2-inch pieces), crusts removed
2 cups milk
1/4 cup sugar
3 tablespoons butter
Dash salt
2 large eggs
1/2 teaspoon vanilla extract
LEMON SAUCE:
1/2 cup sugar
1 tablespoon cornstarch
Dash salt
1 cup water
1-1/2 teaspoons grated lemon zest
2 tablespoons butter
1 tablespoon lemon juice
1 drop yellow food coloring, optional

Steps:

  • Place bread cubes in a greased 1-qt. baking dish. In a saucepan, heat milk, sugar, butter and salt over low heat just until butter melts. In a bowl, beat eggs; whisk in warm milk mixture. Stir in vanilla. Pour over bread. Place baking dish in a shallow pan of hot water. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted 1 in from the edge comes out clean. For the lemon sauce, combine sugar, cornstarch and salt in a saucepan. stir in water and lemon zest; bring to a boil. Cook and stir for 2 minutes. Remove from the heat; stir in butter, lemon juice and food coloring. Serve warm or cold with the pudding. Refrigerate leftovers.

3 cans Buttermilk Biscuits (the Non-flaky Ones
1 cup sugar
2 teaspoon cinnamon (2-3 tsp)
2 sticks butter
1/2 cup brown sugar

Steps:

  • Preheat the oven to 350 degrees.
  • Open up all three cans of biscuits and cut each biscuit into quarters.
  • Next, combine the white sugar with 2-3 teaspoons of cinnamon. (3 teaspoons of cinnamon gives it a fairly strong cinnamon flavor. If you're not so hot on cinnamon, cut it back to 2 teaspoons.) Dump these into a 1 gallon zip bag and shake to mix evenly.
  • Drop all of the biscuit quarters into the cinnamon-sugar mix. Once all the biscuit quarters are in the bag seal it and give it a vigorous shake. This will get all those pieces unstuck from one another and nicely coated with cinnamon-sugar. Spread these nuggets out evenly in the bundt pan.
  • At this point, you're going to want to melt the two sticks of butter together with ½ cup of brown sugar in a saucepan over medium-high heat. This can be light or dark brown sugar. Cook butter/sugar mixture, stirring for a few minutes until the two become one. Once the brown sugar butter has become one color, you can pour it over the biscuits.

8 tablespoons cornmeal
Pinch salt
Pinch baking soda
1 teaspoon sugar
Scalding hot water
1 quart milk
1 1/2 teaspoons salt, divided
4 cups all-purpose flour
3 to 4 tablespoons shortening, butter or lard
Additional flour, if needed
Butter for tops of loaves

  • The night before you wish to do your baking: Put cornmeal in a pint jar. Add a pinches of salt and soda. Add sugar. Add enough hot water to fill the jar. Stir well. Cover with a lid and let stand overnight in a warm place. The next morning, combine of milk, cornmeal mixture, 1/2 teaspoon salt and flour. Stir well to make a stiff batter. Cover and place the entire bowl in a container of warm water and set in a warm place. You will likely have to drain some of the water off and replace with warmer water on a continuing basis. Try to hold the temperature as constant as possible. It will take 3 to 4 hours to rise. If it is very slow in rising, you can stir it again, then place the bowl back in the warm water. When the dough rises, combine 1 teaspoon salt, shortening and flour enough to make a stiff dough. Knead 10 minutes. Preheat oven to 375°F. Shape dough into 3 loaves. Grease the sides of the loaf pans well with butter, then place the loaves in pans and let rise until they are doubled in bulk, about 45 minutes to 1 hour. Bake 30 to 40 minutes.
