Steps:

Sometimes you get a bad batch of phyllo that rips and tears easily, so I always buy an extra just in case. I have frozen these before baking. Just add a few minutes to cooking time when you cook them in a frozen state. I have also doubled this recipe for large parties.

3 tablespoons olive oil
1 onion, finely chopped
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 teaspoon salt
1 (4 ounce) package feta cheese, crumbled
½ cup cottage cheese
1 egg, beaten
1 (16 ounce) package phyllo dough
1 cup unsalted butter, melted

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
  • Preheat oven to 400 degrees F (200 degrees C).

3/4 cup chopped dried apricots

Steps:

1 1/2 pounds cream cheese, at room temperature
1 cup sugar
1 teaspoon grated lemon zest
4 eggs, at room temperature
1/4 teaspoon kosher salt
2 tablespoons all-purpose flour
2 tablespoons plus 1 teaspoon fresh lemon juice
2 teaspoons vanilla extract
1 tablespoon honey
1 cup shelled pistachios
1 1/2 teaspoons grated orange zest
1/8 teaspoon kosher salt
1 teaspoon ground cinnamon
5 tablespoons sugar
4 tablespoons unsalted butter, melted and cooled, plus additional for greasing pan
4 oranges
1/4 cup orange juice
1 cup sugar
3 tablespoons water
1/2 cup heavy cream

Steps:

  • The cake must be made one day before serving. To begin making the filling, place a sieve over a bowl and line it with a double layer of paper towels. Spoon the yogurt into the sieve and let drain for 2 hours.
  • Preheat oven to 325 degrees. To make the crust, place pistachios, orange zest, salt, cinnamon and sugar in a food processor and pulse until nuts are ground. Put in a bowl and stir in the melted butter.
  • Butter a 9-inch springform pan. Press the pistachio mixture into the bottom of it and set aside.

  • To make the sauce, use a paring knife to remove all peel and pith from the oranges, working over a bowl to collect any juice. Cut the orange sections out from between the membranes and place in the bowl. Add the 1/4 cup orange juice to the bowl and set aside.
  • Stir the sugar and water together in a medium saucepan. Use a pastry brush dipped in water to wash down any sugar crystals from the sides of the pan. Place over low-medium heat and cook without stirring until the sugar turns a nice caramel color. Remove from heat and carefully pour in the heavy cream, as the mixture may spatter. Return to the heat and stir until the caramel is dissolved. Remove from heat and stir in the oranges and juice. Set aside. (The sauce can be made ahead, refrigerated and warmed slightly before serving.)
  • Release the sides of the springform pan. To cut the cake, rinse a large sharp knife under hot water and cut a slice of cake. Wipe off the knife and reheat with hot water before slicing the next piece. Place on dessert plates and spoon a pool of sauce, with orange sections, beside each slice. Serve.

¼ cup (60ml) water
½ cup (100g) sugar
1½ tsp. lemon juice
¾ tsp. rose water
1 lb. (450g) full-fat cream cheese
2 tsp. cornstarch
¼ cup (50g) sugar
½ tsp. flaky sea salt
½ tsp. vanilla bean paste
10 sheets (240g) good-quality filo pastry, each sheet 12 x 15-inches
8½ Tbsp. (120g) unsalted butter, melted
2 Tbsp. pistachios, finely crushed in a food processor or by hand
1½ Tbsp. dried rose petals (optional)

Steps:

  • To make the rose syrup, put the water and sugar into a small saucepan and place over medium-high heat. Mix well, using a wooden spoon, and then, once it starts boiling, add the lemon juice. Simmer gently for 2 minutes, then stir in the rose water and remove straight away from the heat. Set aside.
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • To make the filling, put the cream cheese, cornstarch, sugar, salt, and vanilla bean paste into a medium bowl and whisk well to combine. Set aside.
  • Spread out one filo sheet on a work surface and brush evenly with some of the melted butter. Top with another sheet and brush with butter again. Repeat the process until you have five layers evenly brushed with butter.   • Once all 12 pastries are made, bake for 22 minutes or until golden and crisp- some of them will pop open, but that's okay. Remove from the oven and set aside to cool for 10 minutes. Drizzle with the syrup, sprinkle with the crushed pistachios and rose petals, if desired, and serve.
