Steps:
- Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
- Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

- For the cookies: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Whisk together the graham crumbs, flour, baking powder, baking soda and salt in a bowl. In another large bowl, beat the sugar and butter with an electric mixer until fluffy, about 3 minutes. Add the vanilla and egg and beat to combine. Add the graham mixture and beat to incorporate. Knead with your hands to bring the dough together into a ball.
- Flatten the dough into a disk, place it on a piece of parchment paper and roll with a rolling pin into an 11-inch circle, about 1/4 inch thick. Use a 3-inch round cookie cutter to cut out 8 cookies. Reroll the scraps to 1/4 inch and cut out 2 more cookies. Transfer the cookies to the prepared baking sheet. Discard the dough scraps.
- Bake the cookies until the undersides are golden brown and the tops are just set, 9 to 10 minutes. Cool completely on a rack.
- Put about 2 tablespoons of marshmallow creme in the center of a cookie (do not spread) and top with a second cookie to make a sandwich. The creme will ooze to fill the sandwich as it sits. Repeat with the remaining cookies, then freeze until the creme is firm, about 20 minutes.
- For the glaze: Line a baking sheet with parchment paper and place a cooling rack on top. Line a second baking sheet with parchment paper and lightly oil the paper.
- Put the chocolate candy coating in a heatsafe bowl (the smallest, deepest bowl it can fit in without surpassing the rim). Microwave in 30-second intervals, stirring after each interval, until melted and smooth, about 2 minutes.
- Submerge a cookie sandwich in the melted chocolate and pull it out using 2 forks, letting the excess drip off. Transfer to the prepared cooling rack and sprinkle with sanding sugar. Transfer to the oiled parchment on the second baking sheet to set. Repeat with the remaining cookie sandwiches.

Steps:
- Preheat oven to 425˚F (220˚C).
- In a small mixing bowl combine the mozzarella and feta and set aside.
- On a large floured surface, roll out the pizza dough to an oval roughly 10 inches (25 cm) in length.
- Transfer the dough to a parchment paper-lined baking sheet.
- Cover surface of dough with olive oil and spoon on cheese mixture leaving a 1 inch (2 cm) margin around the outside of the dough.
- Fold in the 1 inch (2 cm) margin creating a crust around the cheese.
- Brush the crust with egg wash.
- Bake for 10 minutes.
- Remove the baking sheet from oven and with a knife spread out some of the melted cheese in the center of the pizza boat and crack an egg into it.
- Turn down heat to 400˚F (200˚C).
- Bake for an additional 6-8 minutes.

MUSHROOM PIZZA
A divine homemade mushroom pizza topped off with arugula

- For the pizza dough:
- Mix the dried yeast & warm water in a cup, leave for 15 minutes until frothy.
- Prepare a bowl with the flour. Form a well in the center and add the yeast mixture. Mix, then add the 200ml water with the salt. Knead dough for 10 minutes. Form two balls, leave dough to rise in a container that has been brushed with olive oil. Leave dough to rise for at least 4 hours or leave overnight.
- Preheat oven to 220C. Knead the dough again for 5 mins, roll out thinly on a baking tray. Rub over lightly the garlic, then add the mozzarella, mushrooms, salt and pepper. Be generous with the mushrooms as they tend to shrink in the oven.
- Bake for 8-10 minutes until golden and crisp. During baking time, mix arugula and basil with olive oil in a bowl.
- Once pizza is ready and out of the oven, top on some of the arugula mix.

ULTIMATE CALIFORNIA MOON DOGGIE PIZZA
This pizza has a pesto sauce base with chicken, artichokes, goat cheese, and sun dried tomatoes. My husband and I fell in love with it when we ate at an Ultimate California Pizza joint while on vacation. I doubt we will ever see a location near us so I created this very similar version. In the summer, I love to make this one on the grill.
