Two 15-ounce cans chickpeas, rinsed and patted very dry
2 tablespoons olive oil
3/4 teaspoon kosher salt
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon sugar
Freshly ground black pepper
6 tablespoons olive oil
1/4 cup red wine vinegar
1 1/2 teaspoons dried oregano
1 1/2 teaspoons sugar
Kosher salt and freshly ground black pepper
18 ounces romaine
1 cup cherry tomatoes, halved
1/2 small red onion, thinly sliced
1/2 cup pitted black olives
4 ounces chopped salami
3 ounces shredded mozzarella
Freshly ground black pepper

Steps:

  • For the crispy ranch chickpeas: Preheat the oven to 350 degrees F.
  • Toss the chickpeas with the olive oil and salt and spread out on a rimmed baking sheet. Bake, tossing once halfway, until lightly browned and crisp on the outside, 45 to 50 minutes.
  • While the chickpeas are baking, combine the parsley, garlic powder, onion powder, basil, thyme, sugar and a few turns of pepper in a small bowl.
  • While the chickpeas are still warm, toss with the seasoning. Taste and adjust as desired. They will continue to crisp as they cool. Set aside 3/4 cup for the salad (reserve the rest for another use).
  • For the dressing: Put the oil, vinegar, oregano, sugar and some salt and pepper in a jar with a lid, secure the lid and shake to combine.
  • For the pizza parlor salad: Add the romaine lettuce to a large bowl. Top with the cherry tomatoes, red onion, black olives, salami, mozzarella, 3/4 cup of the crispy ranch chickpeas and some black pepper. Serve with the dressing on the side.

3 medium tomatoes, diced and seeded
16 ounces cheddar cheese, cubed

3/4 cup canola oil
2/3 cup grated Parmesan cheese
1/2 cup red wine vinegar
2 teaspoons dried oregano

½ pound salami, cut into strips
1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
1 tomato, chopped
½ cup pitted black olives, halved
1 tablespoon chopped fresh chives
1 (8 ounce) can tomato sauce
½ cup vegetable oil
¼ cup white wine vinegar
1 teaspoon white sugar
1 teaspoon salt
¼ teaspoon garlic powder
1 teaspoon dried oregano
⅛ teaspoon ground black pepper

1 (5 ounce) package baby lettuce
4 cups grape tomatoes
1/2 red onion, thinly sliced, separated in rings
1/2 sweet red pepper, cut in bite-size strips
1 (15 ounce) can cannellini beans, rinsed and drained
6 ounces link pepperoni, casing removed, and thinly sliced
4 ounces crumbled blue cheese
1 (5 1/2 ounce) box italian seasoned croutons
1/2 cup extra virgin olive oil
1/3 cup white balsamic vinegar
1/4 cup snipped flat-leaf Italian parsley
1/4 cup fresh basil (freshly snipped)
4 garlic cloves, minced
1 teaspoon sea salt or 3/4 teaspoon salt
1/2 teaspoon black pepper

Rolling the dough very thin takes some patience, but the reward is a snappy crust similar to that of pizza tonda, a thin-crust pie that's popular in Rome. The salad is made of arugula, white beans and pickled pepperoncini, dressed simply with olive oil and the brine from the peppers, but any salad topping would do. (The C.P.K. original had radicchio, greens, tomatoes and a vinaigrette.) With an abundance of leaves atop, fold the pieces in half to eat, or embrace the mess - it's all part of the fun.

1 (15-ounce) can white beans, such as cannellini or Great Northern, rinsed
1/4 cup sliced pickled pepperoncini (about 6 to 8 peppers), plus 2 tablespoons brine
2 tablespoons extra-virgin olive oil, plus more for greasing

1 pound store-bought or homemade pizza dough, at room temperature, divided into two 8-ounce portions
1 cup freshly grated Parmesan, plus more for serving
3 to 5 ounces baby arugula

Steps:

  • Heat the oven to 500 degrees. Place a sheet pan in the oven to heat.
  • In a large bowl, stir together the white beans, pepperoncini, pickle brine and 2 tablespoons extra-virgin olive oil. Season with salt and pepper; set aside.
  • Place a kitchen towel on a work surface, then place an upside-down sheet pan or cutting board on the towel. (This will serve as your pizza peel; the towel stabilizes the setup as you roll the dough). Lightly grease a piece of parchment with olive oil and place on top of the upside-down sheet pan.
