1 pound ground beef
1 tablespoon tomato paste
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon ground black pepper
¼ teaspoon dried oregano
4 slices mozzarella cheese
4 fresh hamburger buns

Steps:

  • Combine beef, tomato paste, salt, sugar, garlic powder, Italian seasoning, pepper, and oregano in a large bowl. Mix thoroughly. Cover and refrigerate to let flavors marry, about 4 hours.
  • Form beef mixture into 8 thin patties. Place 1 slice of mozzarella cheese on each of 4 patties; leave at least a 1/2-inch border, breaking up the cheese as needed. Place remaining patties on top and pinch edges to seal in the cheese.

1 pound Italian sausage (a little more is fine!)
1/2 teaspoon Italian seasoning
12 slices provolone
16 slices pepperoni
Thinly sliced red onion, for topping
1 green bell pepper, sliced thick
Sliced black olives, for topping
8 tablespoons jarred marinara sauce, plus a little more
4 kaiser rolls or good hamburger buns (kaiser rolls from the bakery section)
Butter, for toasting
Grated Parmesan (store bought)

Steps:

  • Combine the ground beef, Italian sausage and Italian seasoning in a bowl. Knead the mixture together and form it into four large/thick patties.
  • Heat a skillet over medium-high heat. Fry the burgers on one side for several minutes, then turn the burgers. Lay 2 slices of provolone on each patty, followed by 4 slices of pepperoni. Add a couple of thin slices of red onion, a slice of green bell pepper and a pile of black olives. Spoon a little marinara sauce on top, then lay another slice of cheese on top of all the fillings.
  • Place the lid on the skillet and allow the burgers to cook all the way through while the cheese melts and the pepperoni warms.
  • Split the rolls and toast them in butter in a skillet until nice and golden and crisp. Spread both halves with more marinara sauce and sprinkle the sauce with Parmesan.
  • Lay the patties on the bottom buns, then top with the top buns. Serve immediately; hearty appetites are recommended!

2 tablespoons canola oil
1 1/2 pounds ground chuck (80 percent lean)
Kosher salt and freshly ground black pepper
1/2 cup tomato sauce
1/2 teaspoon Calabrian chiles, chopped fresh chiles or flakes
1/4 cup fresh basil, sliced
8 ounces fresh mozzarella, cut into 8 thin slices
4 slices focaccia, split
4 ounces arugula
1/4 cup grated Parmigiano-Reggiano
Balsamic vinegar, for serving

Steps:

  • Heat a griddle or large cast-iron pan over high heat. Add the canola oil and let heat until it begins to shimmer.
  • Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 1 1/2 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper.
  • Put the burgers on the griddle or in the pan, divot-side up. Cook the burgers, flipping once, until golden brown on both sides and cooked to medium doneness, about 8 minutes total.
  • While the burgers cook, combine the tomato sauce, Calabrian chiles, basil and some salt and pepper in a small saucepan over medium heat. Cook until warm, 4 to 5 minutes, then remove from the heat and set aside.
  • Top each burger with 2 slices of the mozzarella. Carefully add 1/4 cup of water to the pan and immediately cover tightly with a lid. (If using a griddle, do one at a time and use a sandwich dome or stainless-steel bowl to cover.) Count to 10. Lift lid or dome to make sure that the cheese is totally melted (if not, cover again and count 5 second longer). Transfer the burgers to a plate and loosely tent with foil.
  • Place the burgers on the bottom halves of the focaccia slices. Top with the tomato sauce, arugula, Parmigiano-Reggiano, a drizzle of balsamic vinegar and the top focaccia slices and serve immediately.
