Incredible Oat Bran Muffins, Plain, Blueberry or Banana image

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

Number Of Ingredients 8

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

1/4 cup oil
1 medium egg
1 cup milk
1/4-1/2 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
2 cups flour

Steps:

  • In a large bowl combine the oil, egg, milk, sugar and salt. Mix it very well with a fork or wire whisk. Measure in the baking powder and flour. Mix again until all of the dough particles are moistened. Do not over mix. The whole thing should take about 20 to 30 strokes. Spoon the batter into a dozen well oiled muffin cups. Bake at 400F for aout 20 minutes. Remove from the oven and cool slightly before removing from the pan.
  • Cereal Muffins: After preparing the above recipe using 1/4 cup of sugar, add 1 cup of cooked cereal. You may add oatmeal, or grits, or rice, or farina, or whatever you have leftover. This makes about 18 muffins.
  • Whole Wheat Muffins: Use half or all whole wheat flour instead of the white flour called for. Use 1/3 cup brown sugar for the sweetener.
  • Rye Muffins: Replace 1/2 cup of white flour with rye flour. Add 1 teaspoon caraway seeds to the batter. Use 1/4 cup of brown sugar for the sweetener.
  • Cornmeal Muffins: Replace 1 cup of white flur with cornmeal. Use 1/3 cup of white sugar for the sweetener.

  • Melt crisco (fat) and add.

1 egg
1/2 c milk
1/4 c shortening (i use butterflavored crisco)
1 1/2 c all purpose flour
1/2 c granulated sugar
2 tsp baking powder
1/2 tsp salt

  • 1. Heat oven to 400 degrees. Spray muffin cups (2 3/4" diameter) of muffin pan with butter flavored vegetable spray or grease with shortening, lightly, or of course you can use paper cups that go in the muffin tins.
  • 2. Beat egg, stir in milk and oil. In a separate bowl, mix the dry ingredients, and make a well in the center.
  • 3. Pour the wet ingredients into the dry ingredients, and stir well just until moistened. Batter should be lumpy.
