Tips:

  • Choose ripe plantains: Look for plantains that are mostly black or yellow with a few green streaks. These plantains will be sweet and have a soft texture.
  • Peel the plantains carefully: Use a sharp knife to score the plantain lengthwise and then peel it off in strips. Be careful not to cut yourself.
  • Slice the plantains evenly: This will help them cook evenly. Cut the plantains into 1-inch thick slices.
  • Use a large skillet or griddle: This will give the plantains plenty of room to cook without overcrowding.
  • Don't overcrowd the skillet: Cook the plantains in batches if necessary to avoid overcrowding.
  • Cook the plantains over medium heat: This will help them cook evenly without burning.
  • Flip the plantains frequently: This will help them cook evenly and prevent them from sticking to the pan.
  • Reduce the heat to low and add the rum and butter: This will create a delicious sauce that will coat the plantains.
  • Simmer the plantains in the sauce for a few minutes: This will allow the flavors to meld and the sauce to thicken.
