Tips:

  • Choosing the right sweet potatoes is crucial for this recipe. Look for firm and plump sweet potatoes without any blemishes or bruises. Choose varieties that are high in natural sugars, such as Garnet or Beauregard.
  • Soaking the grated sweet potatoes in water before cooking helps remove excess starch and prevents the pone from becoming gummy. Make sure to rinse the grated potatoes thoroughly after soaking to remove any remaining starch.
  • Using a cast iron skillet adds a wonderful flavor to the pone. If you don't have a cast iron skillet, you can use a regular non-stick skillet, but make sure to preheat it well before adding the batter.
  • Cooking the pone over low heat allows it to cook evenly without burning. Be patient and resist the temptation to increase the heat, as this can result in an undercooked center and a burnt exterior.
  • Flipping the pone halfway through cooking ensures that it cooks evenly on both sides. Use a spatula to gently flip the pone, taking care not to break it apart.
  • Serving the pone warm with butter, honey, or syrup enhances its flavor and makes it a truly delightful treat.

Conclusion:

This plantation sweet potato pone is a delicious and comforting dish that is easy to make. With its simple ingredients and straightforward preparation, it's a perfect choice for a cozy breakfast or brunch. The combination of sweet potatoes, spices, and molasses creates a unique and flavorful pone that is sure to become a family favorite. So next time you're looking for a sweet and satisfying dish, give this plantation sweet potato pone a try. You won't be disappointed!
