POACHED SALMON WITH MUSHROOMS, TARRAGON, AND CREAM
Because salmon is so easy to cook at home, I almost never order it in restaurants. I can poach it in white or red wine and make a sauce by adding some cream to the pan. When I want an elegant salmon supper, however, this is the recipe I return to over and over again. It combines three of my favorite ingredients, fresh tarragon, sautéed mushrooms, and salmon. If I don't have an open bottle of white wine on hand, I use dry white vermouth, which is shelf stable.

Steps:
- In a small skillet, melt the butter over high heat. Add the mushrooms and sauté until they give off some liquid, about 5 minutes. Remove from the heat and season to taste with salt and pepper.
- Pour the wine into a saucepan large enough to hold the salmon and bring to a simmer. Slip in the salmon, cover the pan, and poach gently over low heat until the salmon tests done (it should appear opaque when pierced with the point of a knife), 8 to 10 minutes. Remove the salmon from the poaching liquid with a slotted skimmer and set aside on a warmed plate; keep warm.
- Add the cream and 1 tablespoon tarragon to the poaching liquid and reduce over high heat to a slightly syrupy sauce. Add the mushrooms and warm through. Spoon the sauce over the salmon. Garnish with a bit more tarragon.

Steps:
- First wipe the button mushrooms clean with a damp paper towel. Slice the morels in half first and check for bugs that might have crawled inside. If using fresh morels, wash them first; if dried you may reconsititue them by soaking them in warm water for 30 minutes.
- Melt 4 tablespoons of the butter in a pan and saute the button mushrooms over medium-high heat for about 5 minutes or until done. Set these aside.
- Now melt the remaining 2 tablespoons of butter in the same pan and saute the shallots over medium-high heat for about 4 minutes. Add the sliced morels and sauted for a minute more.
- Reduce the heat slightly and deglaze the pan with the wine. Stir in the stock and cream. Add the tarragon and season to taste with salt and pepper.
- Let the sauce bubble for a few minutes until it reaches the desired consistency, then add the mushrooms back in and heat through.
- Serve with crostini (slices of a French bagette, toasted).

Tips:
- Choose the right salmon. Look for a piece of salmon that is fresh and has a bright, vibrant color. Avoid any salmon that is dull or has a slimy texture.
- Use a large pot. You need a pot that is large enough to accommodate the salmon and the poaching liquid.
- Poach the salmon gently. Bring the poaching liquid to a simmer and then add the salmon. Cook the salmon for 8-10 minutes per inch, or until it is cooked through.
- Don't overcook the salmon. Overcooked salmon will be dry and flaky. It is better to err on the side of undercooking the salmon, as you can always cook it for a few more minutes if needed.
- Serve the salmon immediately. Poached salmon is best served immediately, while it is still hot and flaky. You can serve it with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.
Conclusion:
Poached salmon is a delicious and healthy way to enjoy this versatile fish. It is a relatively easy dish to prepare, and it is perfect for a weeknight meal or a special occasion. With a few simple tips, you can poach salmon perfectly every time.
