Black lava salt, or coarse black sugar, for rim ((optional))
1/2 cup apple cider
2 tablespoons pomegranate juice
1 tablespoon lemon juice
2 ounces vodka or apple vodka
1/8 teaspoon activated charcoal for coloring (could also use black food dye) ((optional))
Dry ice ((optional))

Steps:

  • 1. If desired, rim your martini glass with black lava salt or coarse black sugar.2. Fill a cocktail shaker with ice. Add the cider, pomegranate juice, lemon, vodka, and activated charcoal, if using. Shake to combine.3. Strain into prepared martini glass. Add a very, very small amount of dry ice, if desired and be sure to wait until the ice fully dissolves to drink or serve as dry ice can be dangerous if it has yet to melt.

2 fluid ounces cranberry-apple juice
1 fluid ounce pomegranate juice (such as POMĀ® Wonderful)
1 slice apple

  • Fill a cocktail shaker with crushed ice; add vodka, cranberry-apple juice, and pomegranate juice. Cover and shake until the outside of the shaker has frosted. Strain into a chilled glass. Garnish with apple slice and a small chip of dry ice for effect.

This is a cocktail with a kick and addictively delicious. I have to say it is enormously useful as a quick shot of party spirit before you go to someone else's party. I always feel better the next day, having a stiff drink before and water (sparkling rather than still but, hey, let's live a little) during a party. Although it is a sour apple martini, at home I refer it only as Kryptonite. The lurid green is quite something. I've given quantities per glass simply because it's better made up glass by glass and you can hand them round to your guests as they request them. I wouldn't want to make these for a huge roomful of people, but they are perfect as a way of helping those who've hot-footed from the office and are weary with the working day unwind at the beginning of a dinner party.

Yield Makes two 6-ounce martinis

1 cup sugar
1 medium green apple (about 8 ounces), peeled (peels reserved)
2 tablespoons freshly squeezed lemon juice
4 ounces best-quality vodka

Steps:

  • Bring sugar, 1 cup water, and 3/4 of the apple peel to a boil in a medium saucepan over medium-high heat. (Reserve the remaining apple peel for garnish.) Cook, stirring occasionally, until sugar has dissolved, about 5 minutes. Transfer syrup to a medium bowl set over an ice bath; let stand, stirring occasionally, until cool. Pour through a fine sieve into another bowl; discard solids.
  • Cut apple into chunks; press through an electric juicer into a small bowl. Pour through a fine sieve into another bowl; discard any solids, and set juice aside
  • Cut remaining peel into thin, 4-inch-long strips. Tie each strip into a knot; set aside in a bowl of water with lemon juice.
