1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 pkg. (16 oz.) frozen mixed vegetables (carrots, corn, green beans, peas), thawed, drained

1 lb chicken, cooked and shredded
1 box stove top
1 can of cream of chicken
2 cups of chicken broth
2 tbsp butter, melted

Steps:

  • Spray your casserole dish with non-stick cooking spray.
  • Put the chicken in your casserole dish, pour cream of soup over the chicken.
  • Evenly sprinkle Stove Top over the chicken.
  • Add your butter in with your broth, then pour over the Stove Top.
  • Bake at 350 for 30 minutes. The Stove Top will be golden brown.

4 boneless chicken breasts
2 dry shallots, peeled and chopped
3 tablespoons butter
3 tablespoons fresh basil, chopped
1 tablespoon fresh parsley, chopped
1/4 cup dry white wine
1 cup chicken stock, heated
1 teaspoon brown sugar
1 tablespoon cornstarch
3 tablespoons cold water
1 lime (juice of)
salt and black pepper, to taste

Steps:

  • heat half of butter in frying pan over medium heat.
  • add chicken, and season with salt and black pepper, continue cooking for 4 minutes.
  • turn chicken over and cook for 5 minutes.
  • set chicken pan aside.
  • in a clean saute pan add remaining butter over medium heat.
  • add shallots, basil, parsley, and wine.
  • cover and cook for 3 minutes.
  • stir in chicken stock, brown sugar, and lime juice, cook for 6 minutes over low heat.
  • dissolve cornstarch in 3 tablespoons of cold water.
  • stir into the chicken broth sauce, and quickly bring to a boil, cook for 1 minute.
  • place chicken in sauce and simmer for 2 minutes over low heat.
  • serve.

3 1/2 lbs chicken pieces (skinless with bone in)
3 carrots, pared and cut in half
2 celery ribs, diced in 1 inch pieces
4 medium potatoes, peeled
1 tablespoon fresh parsley, chopped
24 fresh mushrooms, cleaned and diced
1 teaspoon basil
3 tablespoons butter
4 tablespoons flour
1/2 teaspoon paprika
salt and black pepper

Steps:

  • Place chicken pieces in a saucepan. cover with water and bring to a boil. skim off foam.
  • add carrots, celery and potatoes, parsley, basil.
  • add salt and black pepper according to your taste.
  • bring to a boil and cook for 30 minutes over medium heat.
  • add mushrooms, cook for 7 minutes.
  • remove saucepan from heat, and with a slotted spoon remove, chicken and veggies, and put aside, reserve liquid.
  • heat butter in a saute pan over medium heat.
  • lower heat, add flour, mix and cook for 3 minutes over low heat.
  • add 3 cups of reserved cooking liquid to pan.
  • stir well and cook sauce for 12 minutes over medium heat.
  • place chicken and veggies in sauce.
  • sprinkle with paprika and simmer for 5 minutes.
  • serve.
