2 tablespoon olive oil
2 tablespoons butter
8 chicken legs (bone in and skin on)
Salt and ground pepper (to taste)
2 onions (thinly sliced)
3 garlic cloves (crushed)
1/4 teaspoon ground cumin
2 fresh thyme sprigs
1 cup red wine (optional)
1 cup chicken stock
2 tablespoons Worcestershire sauce

Steps:

  • In a deep sautué pan over medium heat, warm the olive oil and butter.
  • Season the chicken with salt and pepper. Add the chicken to the pan and brown on all sides, about 7 minutes. Transfer to a platter.
  • Add the onion to the pan and cook until tender and translucent, about 4 minutes. Add the chicken, garlic, thyme, wine, stock, cumin and Worcestershire and bring to a boil.

salt and ground black pepper to taste
2 teaspoons butter
4 small onions, sliced into rings, divided
¼ cup cooking wine
1 cube chicken bouillon with saffron
1 teaspoon ground cinnamon
1 clove garlic, chopped
1 sprig fresh thyme
2 bay leaves
1 cup crema Salvadorena (Salvadoran-style sour cream)

Steps:

  • Season chicken with salt and pepper.
  • Melt butter in a large, deep skillet over medium heat. Cook chicken pieces, in batches if necessary, until browned, 4 to 5 minutes per side. Add 1/2 of the onion rings, wine, chicken bouillon, cinnamon, garlic, thyme, and bay leaves. Cook over low heat until chicken is tender, about 20 minutes.
  • Stir remaining onion rings into the skillet. Cook until softened slightly, about 3 minutes. Transfer chicken to a serving platter.

3 tablespoons oil
3 onions, sliced thinly
1 cup water or 1 cup stock
1/2 cup white wine
1 bay leaf
