4 eggs
¼ cup vegetable oil
2 tablespoons water
1 (3 ounce) package instant pistachio pudding mix
1 cup sour cream
½ cup maraschino cherries
½ teaspoon green food coloring
½ teaspoon ground cinnamon
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 x 5 inch loaf pans.
  • Mix together cake mix, eggs, oil, water, pudding mix, sour cream, cherries, and food coloring. Pour into prepared pans. In a small bowl, stir together cinnamon and sugar. Sprinkle tops of loaves with mixture.

Pomegranate, Banana and Pistachio Bread image

We love banana bread, so I'm always on the lookout for new and different recipes. Although I haven't tried this one yet, this bread recipe from the Pom Wonderful website looks so good I just had to share it! NOTE: You can save time and work by using packaged pomegranate seeds, available in some grocery stores (such as Trader Joe's) in the refrigerated produce section.

1 cup pomegranate seeds
2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup mashed banana (2-3 bananas)
1/3 cup vegetable oil
1/3 cup milk
1 egg, lightly beaten
1/2 cup shelled pistachios or 1/2 cup slivered almonds, chopped
pomegranate seeds (for garnish) (optional)
shelled pistachios (for garnish) (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease one 9 x 5 x 3-inch loaf pan and set aside.
  • Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the seed sacs. The seeds will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the seeds in a separate bowl. Measure out 1/2 cup of the seeds and set aside. (Refrigerate or freeze remaining seeds for another use.).
  • In a large bowl, stir together flour, sugar, baking powder and salt.
  • In a small bowl, stir together bananas, oil, milk and egg; stir into flour mixture with pomegranate seeds and the chopped pistachios just until moistened. Do not over-mix!

2 Tablespoons cinnamon
1 yellow cake mix
2 (3.5 ounce) boxes of instant pistachio pudding mix (dry)
4 eggs
1/4 cup vegetable oil
1/8 cup water
1 cup sour cream
1 teaspoon green food coloring (optional if you want your bread greener than mine)
1 teaspoon vanilla extract
1 teaspoon almond extract
3 Tablespoons milk
1 1/2 cups powdered sugar

  • Preheat oven to 350*F
  • Grease two bread pans with a spray oil or butter.
  • In a small bowl combine white sugar and cinnamon, mix well.

  • Add powdered sugar 1/2 cup at a time, mixing well after each addition.
  • After icing is mixed pour over bread.
