POMEGRANATE & POPCORN

Pomegranate & Popcorn image

Popcorn and cranberry garlands and snacks are popular for American winter holidays. Well, this is a popcorn and pomegranate snack. Pomegranates abound in the fall where I live, and I love them, so I buy a lot of them. This is a little hard to eat, but it's tasty. It's also very high in fiber.

Time 15m

Yield 1-2 serving(s)

Number Of Ingredients 3

1 medium pomegranate
5 cups popcorn, air-popped
salt

Steps:

  • Remove the seeds from the pomegranate.
  • Pop the popcorn in a hot air popcorn popper.
  • Salt the popcorn to taste.
  • Put about a cup of popcorn in a bowl.
  • Add a handful (about 1/4 cup) of pomegranate seeds.
  • I suggest mixing this a bowlful at a time, because the pomegranate sinks to the bottom.
  • Take handfuls (or spoonfuls, if you're neat) of pomegranate& popcorn, getting some of both.
  • I ate this all by myself, but it might make 2 or more smaller servings.

1/2 cup grated Parmesan
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt
1/4 teaspoon ground turmeric
1/2 cup popping corn
3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Steps:

  • Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.
