FROZEN STRAWBERRY-COCONUT SMOOTHIE WITH POMEGRANATE MOLASSES

Frozen Strawberry-Coconut Smoothie With Pomegranate Molasses image

Fruity pomegranate molasses is the perfect sweetener for this thick strawberry smoothie. This summer I bought a flat of strawberries, and soon afterward realized that they were going to go off before I had a chance to use them. So I hulled them and froze them in small freezer bags (a heaping cup, or 6 ounces, per bag), and now I'm using them for smoothies. When I was working on this smoothie I felt that it needed something to sweeten it, but what? I looked in my cupboard and saw a bottle of pomegranate molasses, and voilà! Now I know that pomegranate molasses, with its fruity, tangy yet sweet flavor, is perfect for red fruit smoothies of all kinds. This one is enriched with cashews, soaked in water for a few hours or overnight, chia seeds (also soaked), and oatmeal.

Yield 1 generous serving

Number Of Ingredients 8

2 tablespoons rolled oats
2 to 3 tablespoons hot or boiling water (enough to just cover the oats)
1 heaping cup frozen strawberries (about 6 ounces)
1 tablespoon soaked chia seeds (1 teaspoon unsoaked)
6 cashews, soaked overnight or for several hours in water to cover (about 1/2 ounce) and drained
1/3 cup light coconut milk
2/3 cup fresh or commercial orange juice
1 1/2 teaspoons pomegranate molasses

Steps:

  • Combine the rolled oats and hot or boiling water in a small bowl or ramekin and leave until the oatmeal is soft, about 15 minutes (alternatively, soak in cold water overnight).
  • Place all of the ingredients (including the soaked oatmeal) in a blender and blend at high speed for 1 minute. Serve at once.

POMEGRANATE PASSION SMOOTHIE

Pomegranate Passion Smoothie image

Pomegranate juice is packed with antioxidants. With all the refrigerated pomegranate juice in the stores now, you don't have to squeeze the living daylights out of each little pom' nugget yerself. ;) Often stores will carry this bottled juice in the produce department. I love the ease of smoothies, especially in my Magic Bullet, which is smaller and less cumbersome than a blender. Recipe is courtesy of Stonyfield Farm.

Yield 2 servings

Number Of Ingredients 5

1 ripe banana
1/2 cup (2 oz./60 g) frozen blueberries
1 Tbs. honey
1/2 cup (4 fl. oz./125 ml) pomegranate juice
1 cup (8 oz./250 g) plain nonfat yogurt

Steps:

  • Peel the banana and cut it into chunks. In a blender or food processor, combine the banana, blueberries, honey and pomegranate juice and process to a coarse puree, 30 to 45 seconds. Add the yogurt and process until smooth. Pour into glasses and serve immediately, or transfer to insulated beverage containers and take to go. Serves 2.

Tips:

  • Choose ripe pomegranates: Look for pomegranates that are heavy for their size and have a deep red color. Avoid pomegranates that are bruised or have soft spots.
  • Prepare the pomegranates: Cut the pomegranates in half and scoop out the seeds. You can also use a spoon to scrape the seeds out of the pomegranate.
  • Use fresh or frozen fruit: You can use fresh or frozen fruit in your pomegranate smoothie. If using frozen fruit, thaw it before blending.
  • Add yogurt or milk: Yogurt or milk will help to make your smoothie creamy and smooth. You can use any type of yogurt or milk that you like.
  • Sweeten to taste: If you like your smoothies sweet, you can add honey, maple syrup, or agave nectar. Start with a small amount and add more to taste.
  • Add ice cubes: If you want a cold smoothie, add a few ice cubes to the blender.
  • Blend until smooth: Blend the ingredients until they are smooth and creamy. You may need to stop the blender and stir the ingredients a few times to ensure that everything is blended evenly.
  • Serve immediately: Pomegranate smoothies are best served immediately after they are made. However, you can store them in the refrigerator for up to 24 hours.

Conclusion:

Pomegranate smoothies are a delicious and healthy way to start your day or refuel after a workout. They are packed with antioxidants, vitamins, and minerals. You can customize your pomegranate smoothie to your liking by adding different fruits, vegetables, and yogurt or milk. Experiment with different flavors and combinations to find your favorite pomegranate smoothie recipe.
