MACAROON SANDWICH COOKIES
What do you get when you cross a macaroon with a macaron? A cookie that is truly magnifique! Give the traditional Passover dessert a French accent by sandwiching preserves between two crisp, chewy coconut cookies. Steps:
- Preheat oven to 300 degrees. Line a baking sheet with parchment paper, and set aside. Place almond paste, sugar, and salt in the bowl of an electric mixer fitted with the paddle attachment; beat on medium speed until mixture looks crumbly, about 3 minutes. Add egg white and vanilla. Continue beating until mixture is smooth and thick, about 3 minutes more.
- Drop 12 even tablespoons of batter about 2 inches apart on lined baking sheet; place 2 almond slices on each mound of dough. Bake cookies, rotating baking sheet halfway through, until golden brown, 20 to 25 minutes. Transfer cookies to a wire rack; let cool completely. Just before serving, lightly dust confectioners' sugar over cookies.
Tips:
- To make sure the coconut mixture is evenly coated, make sure the egg whites are stiff and glossy before folding in the coconut.
- Don't overmix the coconut mixture, as this will make the macaroons tough.
- Be careful not to overcook the macaroons, as this will make them dry and crumbly.
- Let the macaroons cool completely before storing them in an airtight container.
- Pongaroons can be stored at room temperature for up to 3 days, or in the freezer for up to 2 months.
Conclusion:
Pongaroons are a delicious and easy-to-make treat that are perfect for any occasion. With their chewy texture and sweet coconut flavor, they are sure to be a hit with everyone who tries them. So next time you're looking for a fun and festive treat, give these pongaroons a try!
