1 lb hot dogs (cut into 1" pieces)
6 medium russet potato (cubed into 1" cubes. Any baking potato like Yukon will do as well)
3 medium yellow onion (sliced into 1" pieces)
4 - 6 tbsps Caribbean Spice mix (or any spice mix you like to put on roasted potatoes, like steak spice, etc)
2 tbsp chopped garlic
1 1/2 cups sauerkraut (optional)
1/4 cup olive oil

Steps:

  • heat oil in a large pan on medium high, then cook the hot dogs til their colour darkens and they begin to firm up- about 5 minutes, then remove from the pan with a slotted spoon
  • While the hot dogs cook add the potatoes to a large mixing bowl and toss with the oil, then add the spice mix and toss more to fully coat all the potatoes
  • Once the hot dogs are out of the pan add the potatoes and cook on medium with the lid on for 20-30 minutes until almost fork tender, stirring occasionally
  • Add the hotdogs, onions, garlic and optional sauerkraut back to the pan, stir around to full combine, cover and cook another 10 minutes, stirring occasionally

It's very easy and economical, and surprisingly good for such simple ingredients. Although it takes 25 minutes on the stove top, you only have to stir occasionally, so you can be doing other things in the kitchen while it cooks. The amount of hot dog wieners you add just depends on how meaty you want it, and the size of the wieners. As Clara says, "It's nourishing!" although it's a little high in fat and sodium for every day in our household.

3 tablespoons vegetable oil
1 medium onion, diced
2 lbs potatoes, peeled and diced small
5 hot dogs, sliced into rounds (about 10 oz)
8 ounces tomato sauce
1/4 teaspoon salt (to taste)
2 teaspoons sugar

Steps:

  • Prepare the vegetables: Dice the onion. Peel the potatoes and dice into cubes no larger than 1/2 inch.
